Method of preparation

In a bowl, season the filet mignon with rosemary, thyme, ground black pepper, salt and leave to rest for 1 hour. Put a drizzle of olive oil in a pan and seal the fillet on all sides. Let the meat cool for 1 hour. In the same pan, sauté the chopped mushrooms with the olive oil, the onion and season with salt and black pepper. Let it cook until all the liquid is dry. In a food processor, puree the mushroom to form a paste and reserve.

Assembly

On a work surface, open a plastic wrap and place the mushroom paste on top of the cured ham, forming a layer. Then lay the meat on top of the mushroom paste and roll up the filet mignon with the help of plastic, like a rocambole. Reserve. Then open the pasta puff pastry on a counter and brush with egg yolk. Then remove the meat from the plastic, place it on the puff pastry and roll it up. In a form greased with olive oil, lay out the dough and brush with the yolk of an egg. Place in a preheated oven at 180ºC for 30 minutes. Serve immediately.
