Crispy cod fritter with garlic and broccoli

Ingredients:
- 500 g of cod in flakes
- 600 g of diced peeled potatoes
- 6 minced garlic cloves
- 1/2 cup (tea) of oil
- 1 and 1/2 cups cooked and chopped broccoli
- Salt and black pepper to taste
- 4 eggs
- Fry oil
- Pepper sauce to accompany
Method of preparation:
- To prepare the crispy cod pie, soak the cod in water for 12 hours in the refrigerator, changing the water 3 times.
- Drain, place in a pan and pour water to cover.
- Cook for 15 minutes, remove the cod with a slotted spoon and set aside.
- Cook the potato in the cod water for 15 minutes or until softened.
- Pass the still hot potato through the juicer and reserve.
- Fry the garlic in hot oil until golden brown and drain on absorbent paper.
- Coarsely chop the cod in a bowl, add the potato, sautéed garlic, broccoli, salt, pepper and mix with a spoon.
- Add the eggs, one at a time, mixing well after each addition.

Traditional cod pie

Ingredients:
- 500 g of cod in flakes
- 500 g of peeled and washed potatoes
- 2 tablespoons of chopped parsley
- 1 egg
- 1 yolk
- 1 grated onion
- 1 seedless chilli, minced
- salt to taste
- Fry oil
Method of preparation:
- Desalinate the cod for 12 hours, changing the water 3 times during this time.
- Drain, place in a pan, cover with water and cook over low heat for 15 minutes.
- Remove the cod, keeping the cooking water, drain, leave to cool and chop.
- Cook the whole potato in the cod water for 20 minutes, over medium heat, or until tender.
- While they are still hot, pass them through the juicer, removing the skin.
- In a bowl, mix the potato, cod, parsley, egg, egg yolk, onion, pepper and salt to taste.
- Shape the gnocchi using 2 spoons and fry them, a little at a time, in very hot oil until golden brown.
- Drain on absorbent paper and serve.
Cod fish pie with cheese

- 500 g of cod in flakes
- 600 g of diced potatoes

Method of preparation:
- Soak the cod in water in the refrigerator for 12 hours, changing the water 3 times during this time.

- 300 g of cod in flakes
- 500 g of potatoes in their skins
- 1 egg
- 2 tablespoons of wheat flour

- 1 tablespoon of fresh rosemary

- Lemon wedges to serve
Method of preparation:
- Place the cod in a bowl, cover with water and soak for 8 hours, changing the water 3 times during this time. Drain.
- Boil the potato in water until soft.

- 500 g of cod flakes desalted, cooked and minced
- 1/2 cup chopped parsley (minced)
- 1 egg
- 400 g of boiled and mashed potatoes
- Salt and black pepper to taste
- 1/2 cup wheat flour (approximately)
- 1 cup breadcrumbs (for dusting)
- Fry oil
Pate In Olive
- 1 cup black olives (sliced)
- 2 tablespoons of mayonnaise
- 1 cup cottage cheese (mashed)
- 1 box of cream (200g)
- salt to taste
Method of preparation:
- For the pate, beat the ingredients in a food processor and set aside.
- In a skillet, over medium heat, heat the oil and saute the onion and garlic for 3 minutes.
- Add the cod and sauté for 3 minutes.
- Transfer to a bowl and leave to cool.
- Add the green perfume, the egg, the potato and season with salt and pepper.
- Add the wheat flour, little by little, until the dumplings are shaped.
- If necessary, add more flour.

- 3 tablespoons of wheat flour

Method of preparation:
- In a pan, heat the oil and fry the onion and garlic.
