Ingredients for Portuguese Baked Pasta
- 1/2 cup olive oil (tea)
- 1 sliced onion
- 1 chopped tomato
- 1 cup diced ham
- 1 cup peas (frozen)
- 1/2 cup canned corn (drained)
- 1/2 cup sliced green olives
- 1/2 cup(s) of chopped heart of palm
- 2 cups tomato sauce (tea)
- Salt, black pepper and oregano to taste
- 1 package of pasta cooked al dente (500g)
- 1 cup of grated mozzarella
- 3 sliced boiled eggs
- 1/2 cup grated mozzarella
Method of preparation
In a skillet, over medium heat, heat the oil and saute the onion until wilted. Add the tomatoes, ham, peas, corn, olives, hearts of palm and sauté for 3 minutes.
Add the sauce and bring to a boil. Season with salt, pepper, oregano and leave to cool.
In a bowl mix the cooked pasta, the sauce and the chopped mozzarella.
Arrange in a medium refractory, lay the egg slices on top and sprinkle with the grated mozzarella.
Take to a medium oven (180º C), preheated, for 15 minutes. Serve.
