To the Tasteatlas official websitedescribe the Brazilian picanha as “a particularly popular and prized cut of fresh beef in Brazil”. No wonder that, according to federal government data, the country produces 9.7 million tons of beef annually.

“It is mainly used for barbecue: the meat is first grilled and then cut on a spit. This cut retains very little fat in the meat, so it needs to be cooked well to not toughen up. In Brazil, every barbecue has picanha and all the best steakhouses have picanha on their menus.”, adds the site.

It wasn’t just the picanha that was successful in the charts, other Brazilian dishes have also gained great prominence. In the 29th place was the flooded cow, typical country food that combines beef with cassava. The “encyclopedia of flavours” took the opportunity to explain the reason for the name vacca impantanata: “the marinated meat is cooked and macerated in a thick gravy, hence the alternative name of the dish”.
