Typical dish of Asian cuisine, checkered chicken is an excellent choice for those who want to consume leaner meats.

The origin of the checkered chicken recipe is believed to be in the Qing dynasty, earning it the name Gong bao ji ding, but in Brazil it is known as checkered chicken due to the colors of the dish which can count on vegetables, peanuts and of course the chicken cut into cubes.

Checkered Chicken Recipe: Ingredients List

  • 500 grams of chicken breast cut into cubes
  • 100 grams of skinless roasted peanuts
  • 1/2 diced yellow pepper
  • 1/2 red pepper cut into cubes
  • 1 cup of broccoli in bunches
  • 1 carrot cut into cubes
  • 2 well crushed cloves of garlic
  • 1 large onion cut into cubes
  • 1 tablespoon of corn starch
  • 4 tablespoons of olive oil
  • 1 teaspoon ginger powder
  • 50ml of soy sauce
  • 100ml of water
  • Salt and black pepper to taste

Checkered chicken recipe: method of preparation

  1. Put 1 tablespoon of olive oil in a pan, add the finely chopped onion, ginger powder and garlic and sauté. Reserve in a separate container;
  2. In the same pan, add another 2 tablespoons of olive oil, the peppers, broccoli, carrots, season with salt and pepper and leave to brown for about 4 minutes. Reserve;
  3. Using the same skillet, add the rest of the oil, the diced chicken and fry until golden brown.
  4. Then, transfer all the ingredients back to the pan with the chicken, mix very well and cook for about 3 or 4 minutes;
  5. In a glass put the water, the cornstarch and the soy sauce and mix well,
  6. Then add this liquid to the pan with the chicken and vegetables and cook, stirring constantly, until a thick sauce forms.
  7. Transfer the checkered chicken with vegetables to a refractory and sprinkle the peanuts on top. Now it’s just needed.
