Baker Helena Mil-Homens gives advice on the ideal type of bread for your sandwich
Bread isn’t the first thing people think of when it comes to burgers, but it’s a staple snacking ingredient. The mixture will always be the protagonist, but the quality and type of bread make a total difference in the creation of the sandwich, and can completely change the taste of your burger. Factors like size, flavor and texture all come into play and are essential to a balanced sandwich.
To never compromise on the quality of your sandwich, we call the baker Helena Mil-Homens, of Padaria St. Chico, to give advice and guidelines for choosing a good burger.
Taste
Despite being a vital piece in making a good burger, the flavor of the bun can’t be too strong. “The hamburger bun doesn’t have to be extremely tasty, lest it steal the flavor of everything in between,” says Helena. Despite this, the baker points out that bread can’t be bland: at some point during the meal, you’ll only eat the bread.
Consistency
Of course, the texture of the bread matters in the balance of the sandwich. The hamburger bun should not be too soft, porous or spongy so as not to absorb too much liquid from the meat and fall apart. Important tip: always seal the bread on a very hot griddle to dry out the ingredient and not allow any moisture to penetrate the meat.
To measure
The size of the bread is also very important, and must correspond to that of the meat disc. “The bread must be completely appropriate to the size of the meat. It cannot be missing or left over,” says Helena. A loaf that is too large can make the sandwich dry and doughy, while a loaf that is too small can get lost in the filling and cause the ingredients to fall out of the sandwich.

According to Helena, the ideal is to use brioche bread, which is buttery, firm and tastes right. Soft breads such as milk bread are not good for sandwiches, as they lack bite resistance.
Balance
In the end, the most important thing of all is balance. “The function of the bread is to make the fillings stick together from the first bite to the last. It is terrible when you eat a hamburger and, halfway through the tasting, the filling starts to run out and you need a thousand napkins,” adds Elena.
