Find out how to prepare the delicious fatuche salad, of Lebanese origin, with pita bread, lettuce and vegetables




The traditional Arabic salad, a crunchy combination of vegetables and bread, with the traditional dressing of pomegranate molasses.

Ingredients for the Fatuche salad

– 2 units of romaine lettuce

– 1 Japanese cucumber, unpeeled, cut into cubes

– 3 small radishes, thinly sliced ​​or grated

– 1 seedless tomato, cut into cubes

– 1 cup(s) of mint

Ingredients Pomegranate Molasses Sauce

– 1/2 cup(s) of extra virgin olive oil

– 4 tablespoons of lemon (juice)

– 2 tablespoons of pomegranate molasses

– 1 teaspoon(s) of zahtar

– Salt to taste

Ingredients TO FINISH

– Pita bread of your choice, toasted.

– pomegranate to taste (seeds) (optional)

– extra virgin olive oil to taste

PREPARATION:

  1. Preheat the oven to 180°C.
  2. Start by placing the pita in the oven (see preparation).
  3. Set aside the other ingredients and utensils for the recipe.
  4. Wash the lettuce and mint under running water, place them in a bowl and immerse them in the sodium hypochlorite solution.
  5. Wash and dry the cucumber, remove the ends and cut it into cubes.
  6. Wash the tomato, cut it in half, remove the seeds and cut it into cubes.
  7. Wash the radishes and cut them into thin slices, preferably using a mandolin or grater.
  8. Follow the preparation of the pomegranate molasses sauce.

PREPARATION:

Syrian bread (do this step before starting pre-preparation):

  1. Cut the pita into triangles (8 pieces, like a pizza) and arrange them on a baking sheet.
  2. Drizzle with olive oil and bake for about 5-10 minutes or until golden brown.
  3. Remove from the oven and leave to cool.
  4. Continue pre-preparation (step 3).

Pomegranate Molasses Sauce:

  1. In a bowl or glass jar with a lid, place the lemon juice with the pomegranate molasses, the zattar and the salt.
  2. In the bowl: mix with a fork or wire whisk.
  3. Or in a glass jar, covered, shake to combine the ingredients.
  4. Add the extra virgin olive oil and continue to beat or shake to emulsify.
  5. Reserve.

Fatuche Salad:

  1. Drain the lettuce and mint, wash them under running water and dry them with absorbent paper or spin them.
  2. Roughly tear the lettuce leaves with your hands and place them in a bowl.
  3. Chop the mint leaves and mix them with the lettuce.
  4. Add the cucumber, tomato cubes and radish and mix again.
  5. Whisk the dressing to emulsify it, pour half over the salad and mix well.

FINALIZATION AND ASSEMBLY:

  1. Spread some of the sauce on an individual plate or plates.
  2. Reorder fatuous salad and sprinkle the pomegranate seeds (optional).
  3. Break the toasted pita bread into uneven pieces and place on top of the salad.
  4. If it takes a while to serve, keep the toast separately.
  5. Serve the rest of the sauce separately, to accompany.
