Find out how to prepare the delicious fatuche salad, of Lebanese origin, with pita bread, lettuce and vegetables
The traditional Arabic salad, a crunchy combination of vegetables and bread, with the traditional dressing of pomegranate molasses.

Ingredients for the Fatuche salad
– 2 units of romaine lettuce
– 1 Japanese cucumber, unpeeled, cut into cubes
– 3 small radishes, thinly sliced or grated
– 1 seedless tomato, cut into cubes
– 1 cup(s) of mint
Ingredients Pomegranate Molasses Sauce
– 1/2 cup(s) of extra virgin olive oil
– 4 tablespoons of lemon (juice)
– 2 tablespoons of pomegranate molasses
– 1 teaspoon(s) of zahtar
– Salt to taste
Ingredients TO FINISH
– Pita bread of your choice, toasted.
– pomegranate to taste (seeds) (optional)
– extra virgin olive oil to taste
PREPARATION:
- Preheat the oven to 180°C.
- Start by placing the pita in the oven (see preparation).
- Set aside the other ingredients and utensils for the recipe.
- Wash the lettuce and mint under running water, place them in a bowl and immerse them in the sodium hypochlorite solution.
- Wash and dry the cucumber, remove the ends and cut it into cubes.
- Wash the tomato, cut it in half, remove the seeds and cut it into cubes.
- Wash the radishes and cut them into thin slices, preferably using a mandolin or grater.
- Follow the preparation of the pomegranate molasses sauce.
PREPARATION:
Syrian bread (do this step before starting pre-preparation):
- Cut the pita into triangles (8 pieces, like a pizza) and arrange them on a baking sheet.
- Drizzle with olive oil and bake for about 5-10 minutes or until golden brown.
- Remove from the oven and leave to cool.
- Continue pre-preparation (step 3).
Pomegranate Molasses Sauce:
- In a bowl or glass jar with a lid, place the lemon juice with the pomegranate molasses, the zattar and the salt.
- In the bowl: mix with a fork or wire whisk.
- Or in a glass jar, covered, shake to combine the ingredients.
- Add the extra virgin olive oil and continue to beat or shake to emulsify.
- Reserve.
Fatuche Salad:
- Drain the lettuce and mint, wash them under running water and dry them with absorbent paper or spin them.
- Roughly tear the lettuce leaves with your hands and place them in a bowl.
- Chop the mint leaves and mix them with the lettuce.
- Add the cucumber, tomato cubes and radish and mix again.
- Whisk the dressing to emulsify it, pour half over the salad and mix well.
FINALIZATION AND ASSEMBLY:
- Spread some of the sauce on an individual plate or plates.
- Reorder fatuous salad and sprinkle the pomegranate seeds (optional).
- Break the toasted pita bread into uneven pieces and place on top of the salad.
- If it takes a while to serve, keep the toast separately.
- Serve the rest of the sauce separately, to accompany.
