Greek potato gratin recipe

Ingredients:
- 2 tablespoons butter
- 1 onion chopped
- 2 crushed garlic cloves
- 1 diced carrot
- 1/2 diced red pepper
- 1/2 diced yellow pepper
- 1 cube of vegetable broth
- 1/2 cup (tea) peas
- 1/2 cup seedless black raisins
- 2 1/2 cups (tea) fresh cream
- Salt and black pepper to taste
- 4 thinly sliced potatoes
- Butter for greasing
- 2 cups grated mozzarella
Preparation method:
- In a large skillet, melt the butter over medium heat and sauté the onion and garlic for 3 minutes.
- Add the carrot, peppers and vegetable broth and sauté for 3 minutes.
- Add the peas, raisins and cream.
- Cook over low heat for 5 minutes or until slightly reduced and thickened.
- Season with salt and pepper and set aside.
- Cook the potatoes in boiling water for 5 minutes and drain them.
- In a greased medium baking dish, layer the potatoes, sauce and mozzarella, finishing with the mozzarella.
- Bake in preheated medium oven for 20 minutes or until golden brown. Serve immediately.
