You will only need five ingredients, a blender, a baking tray and a mold to prepare the recipe that has captured the attention of Internet users’ eyes and stomachs. It’s soft on the inside and crunchy on the outside and, of course, grows in the shape of mountains!

Roller Coaster Cookie Casserole

Time: 25 minutes

Performance: 12 servings

Difficulty: easy

Ingredients:

  • 2 1/2 cups sweet cassava starch
  • 1 1/4 cups oil
  • 4 eggs
  • Salt and grated cheese to taste
  • 3/4 cup milk (optional)

Preparation method:

  1. Blend the cassava starch, oil, eggs and salt in a blender until smooth.
  2. If it is too thick, add the milk and then mix.
  3. Pour the mixture evenly into a rectangular baking dish measuring approximately 30cm x 20cm or into a round baking tray until it covers the entire bottom.
  4. Meanwhile, preheat the oven to 180º.
  5. Add grated cheese to taste and bake in a medium oven for about 20 minutes or until the biscuit rises.
  6. Remove from the oven and serve immediately.
