Cauliflower gnocchi

In a pan, cover the cauliflower with water and cook over medium heat until very soft. Drain the cauliflower and chop it in the blender until it becomes a puree. Wait for it to cool and place the puree inside a cloth. Squeeze well until all the water comes out. In a bowl mix the cauliflower puree with the flour. flax seed and almonds. Add the salt, nutmeg and turmeric and mix. Add the egg yolks and mix until you obtain a homogeneous mixture.
Cover the dough with cling film and refrigerate for 15 minutes. On a surface floured with almond flour, roll out portions of dough and cut into the shape of gnocchi. In a large pot of boiling water over medium heat, cook the gnocchi. As soon as it rises to the surface, remove it from the water.
Sauce
Leave the cashews to soak in a container full of water for 8 hours. Then drain it and wash it under running water. In blender, place cashews and 3 cups of water. Beat for 1 minute. Filter the milk obtained through a very fine strainer. Place the milk in a pan and heat it over medium heat, stirring constantly, until it thickens. Season with salt and pepper. Serve the gnocchi with the sauce and sprinkled with parsley.
Tilapia with tomato sauce

- 2 tilapia fillets
- 2 cloves garlic, minced
- 1 red pepper cut into strips
- 1 cup of tea Homemade Tomato Sauce
- 1 tablespoon olive oil
- Juice of 1/2 lemon
- Salt, basil leaves and ground black pepper to taste
Preparation method
In a container, season the tilapia fillets with salt, black pepper, garlic and lemon juice. In a pan, heat the olive oil over medium heat and grill the fish fillets on both sides. Then add the tomato sauce and peppers. Cook for another 5 minutes. Turn off the heat and serve the fish with basil leaves.

Eggplant roll with minced meat
ingredients
- 400 g of minced meat subtle
- 2 aubergines cut into slices
- 1 onion chopped
- 2 crushed garlic cloves
- 3 tablespoons homemade tomato sauce
- 1/4 tomato cut into cubes
- Olive oil, salt and ground black pepper to taste
Preparation method
In a pan, heat the olive oil over medium heat and sauté the garlic and onion. Then add the minced meat and brown it until it loses its reddish color. Season the meat with salt and black pepper and add the tomato cubes and tomato sauce. Cook for another 2 minutes, turn off the heat and set aside. Arrange the aubergine slices in a container, season with salt and black pepper and brush with a drizzle of oil. On a grill, over medium heat, place the slices of eggplant and brown on both sides. Remove the vegetables from the grill, stuff them with the meat, roll them up and serve.
Basil Broccoli Cake

- 1 cup whole wheat flour
- 1/2 teaspoon salt
- 4 tablespoons of olive oil
- 1/2 tablespoon of chemical yeast
- 1/2 cup soy milk
Filling
- 2 beaten eggs
- 1/2 onion chopped
- 2 cups of flower tea broccoli
- 1/2 cup chopped basil
- 1 teaspoon of salt
- 1 pinch of ground black pepper
- 1 pinch of nutmeg

In a container, mix the flour flax seed, wheat flour, salt, olive oil, yeast and soy milk until a smooth dough is obtained. In a round pan lined with baking paper, place half the dough and set aside.
Filling
In a bowl, mix the beaten eggs, onion, broccoli, basil, salt, black pepper and nutmeg. Transfer the filling to the baking dish and cover like the rest of the dough. Place the cake in the preheated medium oven for 50 minutes. After this period, remove from the oven and serve.

Broccoli croquettes

- 1 broccoli floret, chopped
- 3 eggs
- 1 cup bran tea oats
- Salt, ground black pepper and chopped green chillies to taste

Preparation method
In a pan, cover the broccoli florets with water and cook over medium heat until soft. Then drain them and blend them in the blender until they are reduced to small pieces. Add the eggs, oat bran, salt, black pepper and green chilli and beat until a paste forms. Place it in a container, make balls with the dough and work it with a fork. Arrange the croquettes in a pan greased with olive oil. Bake in a preheated medium oven for 25 minutes, turning halfway through cooking. Serve later.

ingredients
- 2 carrots, peeled and cut into slices
- 2 courgettes cut into cubes
- 1 potato peeled and cut into cubes
- 1 onion chopped
- 2 cloves garlic, minced
- 1 liter of homemade vegetable broth
- Salt and extra virgin olive oil as required
- Chopped parsley to decorate
Preparation method
In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until golden brown. Add the carrots, zuchinis and the potato. Brown for a few more minutes. Pour the vegetable broth into the pan and bring to the boil. Lower the heat and cook until the vegetables are tender. Season with salt to taste. Decorate with chopped parsley on top and serve immediately.
White fish ceviche
ingredients
- 500 g of fish fresh white cut into cubes
- Juice of 4 lemons
- 1 red onion cut into slices
- 1 red pepper cut into cubes
- 1 tomato seeded and cut into pieces
- 1/2 cup chopped cilantro
- Salt and pepper, seeded and chopped, to taste
Preparation method
Place the fish in a large bowl and cover it with the lemon juice. Make sure the fish is completely submerged. Let it marinate in the fridge for about 30 minutes or until cooked in the lemon juice (it should become opaque). Add the onion, bell pepper, tomato and cilantro. Season with salt and pepper. Mix well and serve immediately.
