1 cutting board(s), 1 grater (optional), 1 bowl(s), 4 small round (ramekin-type) refractories (or more), 1 culinary brush(es)




cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients for the filling

– 75 g of mozzarella, diced. (or semi-mature cheese)


– oil to taste (or olive oil)

Ingredients for Airfryer rice cake (wheat-free):

– 1 cup(s) cooked rice (leftovers)

– 1 and 1/2 tablespoons of tapioca starch

– 1 tablespoon(s) of corn starch

– 1 tablespoon of grated parmesan

– 1 unit of eggs

– 1 and 1/2 tablespoons of milk

– 1/2 tablespoon(s) of parsley

– 1/4 teaspoon(s) of chemical yeast THE

– Salt to taste

– pepper to taste THE


  1. Separate the ingredients and utensils for the recipe.
  2. The yield is 04 units every 02 portions, prepared in 8cm diameter x 5cm high refractory cups or moulds.
  3. Grease the molds or refractory baking dishes with oil or olive oil.
  4. Grate the parmesan on the fine part of the grater, if you have not purchased it already grated.
  5. Wash and dry the parsley and chop it.
  6. Crack the egg(s) into a bowl and whisk to combine.
  7. Cut the cheese into cubes for the filling.


Rice cake in a cup in the Airfryer (wheat-free) – Dough:

  1. In a bowl, place the cooked rice, milk, beaten egg, tapioca starch, corn starch, parmesan and chopped parsley and mix.
  2. Season with salt and pepper and mix well until you obtain a smooth mixture.
  3. Finally add the chemical yeast.

Rice Cake in a Cup in the Airfryer (Wheat Free) – Assemble and Cook:

  1. Preheat the Airfryer to 200°C.
  2. Divide half of the rice mixture into refractory molds or pans.
  3. Distribute the cheese cubes in the center of the dough.
  4. Cover with the remaining rice pasta.
  5. Brush the gnocchi with a drizzle of oil or olive oil: this ensures that they create a crispier and golden crust, also adding another layer of flavor to the preparation.
  6. If you prepare multiple portions, divide them into cooking phases. Place the molds or refractory baking dishes in the basket.
  7. Place it in the Airfryer drawer preheated to 200ºC.
  8. Close the drawer and bake for about 20 minutes or until golden brown. The baking time depends on the size of the cupcakes and the power of the equipment.
  9. When they are golden and crispy, remove the drawer.
