Ingredients:

  • 3 eggs
  • 10 gems
  • 1 1/2 cups (tea) sugar
  • 1 1/2 cups milk
  • 4 slices of pineapple

Syrup

  • 6 tablespoons of water

Preparation method:

  1. Place the eggs, the egg yolks with the sugar in a bowl and beat them with the planetary mixer or with the whisk by hand until you obtain a white and creamy mixture.
  2. Pour in the milk and juice little by little, stirring gently, add 2 slices of diced pineapple and mix with a spoon.
  3. In a saucepan, dissolve the sugar in the water and cook over low heat without stirring for 12 minutes or until you obtain a medium caramelized syrup.
  4. Grease a mold with a hole in the center with a diameter of 24 cm with the syrup and arrange the pineapple slices over the syrup, and pour in the cream.
  5. Bake in a double boiler in a preheated medium oven for 1 hour or until set.
  6. Leave to cool and refrigerate for 4 hours.
  7. Unmold and serve, decorating with the remaining pineapple slices cut into 4. If necessary, place the mold in a bain-marie for a few seconds to loosen it.
