PREPARATION:

Understanding more about biomass:

Green banana biomass is notable for having good amounts of resistant starch, which is a type of fiber that the digestive system cannot digest. Since this type of fiber is not digested, it serves as food for the beneficial bacteria in the intestine and therefore contributes to the development of the intestinal microbiota. As a result, immunity improves and the risk of intestinal cancer decreases. This fiber also prevents type 2 diabetes and improves intestinal transit.

Green banana biomass also contains vitamin A, which is important for eye and skin health and contributes to growth. Food contains vitamins of the B complex, B1, B2 and B3, which act on the metabolism of glucose, fatty acids and amino acids, that is, they help the body use these substances efficiently. Potassium, manganese and phosphorus are also present in the biomass of the green banana.

There are no contraindications to consuming green banana biomass, only people allergic to bananas should avoid consuming the food.

Like any food, consumption cannot be excessive, as it can cause gas, flatulence and reduce the absorption of some minerals, such as zinc and calcium. Another risk of overeating is that the intestines become loose.

  2. The estimated yield of this recipe is 70 g of ready-made and processed biomass per unit of green banana.

PREPARATION:

Green banana biomass – Cooking:

  1. Carefully remove the bananas from the bunch, keeping the stems.
  2. Place a pressure cooker with half the water on the heat and bring to the boil.
  3. Wash the bananas with soap and water, rinsing them thoroughly.
  4. Once the water boils, add the disinfected bananas to the hot water to give them a heat shock.
  5. Cover the pan and leave it on high heat until it starts to sizzle.
  6. Lower the heat and cook for 10 minutes.
  7. Turn off the heat and wait for the pressure to release normally, without forcing.

Green banana biomass – process:

  1. Place a kettle on high heat with water to boil.
  2. Open the pan and, using tongs, remove the bananas.
  3. Discard the cooking water.
  4. Peel the bananas and put the pulp in a food processor or blender and blend with a little (hot) water, don’t add too much – don’t use the cooking water, use clean water.
  5. Do not let it cool, beat the hot pulp until it forms a very thick paste.
  6. After blending, distribute the biomass into small portions, let it cool slightly and freeze.

FINALIZATION AND ASSEMBLY:

  1. When it is frozen, transfer the portions of green banana biomass in a plastic bag or jar with a lid.
  2. Thaw as needed. It can be used as a thickener in various recipes to replace other ingredients such as oil, mayonnaise and has the advantage of not altering the flavor of the dish.
  3. THE biomass Homemade products can be stored in the refrigerator for seven days or frozen for up to two months.
