Although Pandemic has devastated the hospitality sector in different countries, overturning revenues and has brought many companies to the closure, the US plants recorded a 15% increase in productivity during the health crisis. And surprisingly, this growth has not disappeared over time.

The pandemic has left its mark in the sector. The impact of Covid-19 on the bars and on the catering industry was brutal, forcing many companies to close. But a group of researchers from the universities of Chicago and New York have decided to investigate beyond this evident effect: Has the virus somehow influenced the productivity of restaurants? The answers were collected in a study recently published by National Bureau of Economic Research (NBER), whose title already anticipates the tone of discoveries: “The curious increase in productivity in US restaurants.”

The economists responsible for the study not only discovered that the productivity of the restaurant increased during the pandemic, but also quantified this growth. According to the reports of the report:
“We discovered that, after being practically constant for almost 30 years, the real productivity of restaurants increased by more than 15% during the Covid-19 pandemic”.
