Ingredients for easy chicken pie and shortcrust pastry

  • 1 roll of shortcrust pastry (500 g)
  • Butter for greasing
  • 1 egg yolk for brushing

Filling

  • 3 tablespoons of butter
  • 1 chopped onion
  • 4 cups cooked and shredded chicken
  • 1 can of drained corn
  • 2 chopped tomatoes
  • 1 cup of chopped green olives
  • 2 tablespoons of tomato paste
  • Salt and chopped parsley to taste
  • 1 cup cream cheese (cream)

Method of preparation

For the filling, heat a pan with the butter and sauté the onion until it is wilted. Add the chicken, corn, tomatoes, olives, extract, salt and green flavoring and saute for 3 minutes. Add the ricotta, mix and turn off the heat. Line a greased medium refractory with part of the shortcrust pastry and spread the filling over it. Cover with the shortcrust pastry and decorate on top with strips of shortcrust pastry. Brush with egg yolk and bake in a preheated medium oven for 25 minutes or until golden brown. Remove and cut into pieces to serve.
