The nutritionist indicates the ideal foods for coeliacs and for those who want to have a healthy diet
Gluten is a protein found in wheat, oats, rye, barley, malt and all products that use these ingredients, such as cakes, breads and pizzas. According to sports nutritionist Ricardo Zanuto, reducing the consumption of gluten brings great benefits to those who need to lose weight and improve intestinal functioning. He then discovers a complete gluten-free and lactose-free menu prepared by nutritionist Vivian Cognetti, a member of the Brazilian Sports Nutrition Association.
Breakfast
- It crackles: In a container, mix 1 egg and 2 tablespoons of hydrated cassava gum (tapioca). Place in a non-stick pan over medium heat and brown on both sides. Stuff with sliced banana.
- 1 glass of green juice: in the blender, beat the cabbage, THEbacaxi1 tablespoon of flaxseed, ginger and coconut water until you get a smooth juice.

Morning snack
- 1 kiwi
- two Brazil nuts
Lunch
- leaf salad vegetables (lettuce and rocket) dressed with extra virgin olive oil and lemon
- Sauteed broccoli and carrots
- brown rice
- Bean
- Grilled fish
- Sweet: 1 orange with marc
Afternoon snack
- Papaya cream: 1/2 papaya, 1 banana, coconut milk just enough to make it creamy and 1 tablespoon flaxseed
To have lunch
- Soup mixed: carrots, zucchini, chayote, broccoli, corn-based noodles, and ground beef
Dinner
- lactose-free yoghurt
- 1 cup of tea strawberries
