Zucchini spaghetti with chicken

Ingredients:

  • 4 firm Italian zucchinis
  • 4 tablespoons of olive oil
  • 3 minced garlic cloves
  • Salt and basil to taste

Sauce

  • 4 tablespoons of olive oil
  • 1/2 chopped onion
  • 2 minced garlic cloves
  • 5 chopped tomatoes
  • 1/2 cup (tea) of water
  • 1/2 grated carrot
  • 300 g of cooked and shredded chicken
  • Salt and basil to taste

Method of preparation:

  1. Place a pan with olive oil over medium heat and saute the onion and garlic for 2 minutes.
  2. Add the tomato, water, carrot and cook over low heat until the tomato melts and forms a sauce.
  3. Add the chicken, salt, basil and cook for 5 minutes. Reserve.
  4. Cut the courgettes with a spiral vegetable cutter, obtaining spaghetti.
  5. Heat a frying pan with olive oil over medium heat and saute the zucchini with the garlic and salt quickly or until al dente.
  6. Transfer to a platter, drizzle with the sauce, garnish with basil, and serve.

Ingredients:

  • 1 pack of spaghetti (500g)

Sauce

  • 1/2 cup olive oil (tea)
  • 10 crushed garlic cloves
  • 2 cups canned sardines (drained, cleaned and chopped)
  • 1 cup black olives (sliced)
  • Salt and chopped parsley to taste

Method of preparation:

  1. For the sauce, in a skillet, heat the oil over medium heat and sauté the garlic until it starts to brown.
  2. Add the sardines, the olives, the salt and the green odor. Turn off the heat and mix. Reserve.
  3. Cook the pasta in boiling water according to package directions.
  4. Drain the pasta, reserve 3/4 cup (tea) of the cooking water, add to the sauce, and stir.
  5. Mix the sauce with the cooked pasta and place in a dish or refractory. Serve immediately.

Ingredients:

  • 1 chopped onion
  • 2 tablespoons of margarine
  • 1/2 kg of cleaned prawns
  • Salt, black pepper and chopped parsley to taste
  • 3 cups tomato sauce (tea)
  • 1 pack of cooked spaghetti (500g)

Method of preparation:

  1. In a skillet, over medium heat, saute the onion in the margarine until golden brown.
  2. Add the prawns, salt, pepper, parsley and mix.
  3. Put the tomato sauce and cook for 10 minutes.
  4. Arrange the tagliatelle on a plate, cover them with the sauce and sprinkle with parsley. Serve.

Spaghetti Gorgonzola and Spinach

Ingredients:

  • 3 tablespoons of olive oil
  • 1 chopped onion
  • 1 tablespoon of minced garlic
  • 1 cup diced ham
  • 1 cup spinach (cooked, squeezed and chopped)
  • Salt, black pepper and chopped basil to taste
  • 1 pack of cooked spaghetti (500g)
  • 1/3 cup spaghetti pasta cooking water
  • 1/2 cup grated blue cheese
  • 1/2 cup walnuts (chopped)

Method of preparation:

  1. In a frying pan, heat the oil over medium heat and saute the onion and garlic for 3 minutes.
  2. Add the ham, spinach and season with salt, pepper and basil.
  3. Place the cooked pasta in a large bowl.
  4. Add the pasta cooking water with the sauce and mix with the pasta.
  5. Sprinkle with gorgonzola and walnuts. Serve.
