To accompany (optional):
- seasoned mayonnaise – see recipe – optional
- chili sauce – optional
PRE-PREPARATION:
- Assemble the ingredients and utensils for the recipe.
- Cut the fish fillets into very thin slices and then cut the slices into very small cubes, so that they are almost minced. Place in a bowl and reserve in the refrigerator.
- Put the capers in a colander and wash them under running water to remove the excess salt. Then chop them.
- Wash the pods, discard the ends and side loaves and cut them diagonally into thin slices of about 0.5 cm.
- Wash and chop the parsley. Wash the onion and cut it into very thin slices. Let the herbs dry on a paper towel.
PREPARATION:
Seasoned mayonnaise (optional):
- Cut the pickled cucumber into cubes.
- Wash, peel and cut the carrot into small cubes.
- In a bowl mix the mayonnaise with the pickled cucumbers and carrot cubes.
- Season with pepper and set aside.
Fish pie:
- Put the oil in a deep frying pan or skillet, just enough to cover the gnocchi by half.
- Heat the oil over medium/low heat, meanwhile prepare the gnocchi.
- Remove the bowl with the fish from the refrigerator, add the capers, green onions, parsley and lemon juice and mix.
- Add the lightly beaten egg (see quantity in the ingredients) and season with the turmeric, lemon pepper, salt and pepper.
- Stir again and, if needed, add the flaxseed meal to bind.
- Divide the dough into portions (4 per person).
- Wet your hands and shape the gnocchi into discs or quenelles.
- Add the fritters and fry until the fish is cooked through and the entire surface is golden brown, about 4-5 minutes.
- Remove from pan and drain on paper towels or on a wire rack, set in a form.
Lemon pods:
- Heat the oil in a deep pan.
- Add the cut pods and sauté for 2 minutes, stirring, so that the pods are coated in the oil.
- Add the water (see the amount in the ingredients), cover the pan and cook for 2 minutes, allowing the pod to become very crispy.
- Wash the lemon and the orange, dry them and grate them.
- Turn off the heat and add the lemon and orange zest.
- Add salt and pepper and mix.
- Finally, add the green onions and mix again.
FINISHING AND ASSEMBLY:
- Arrange the wafer on a serving plate or, if you prefer, arrange it on one side of the plates.
- put the fish cakes on another serving plate or distributed among the plates (4 per person) next to the green beans.
- Serve accompanied by seasoned mayonnaise (optional) and pepper sauce (optional).
