Okroshka is one of the oldest dishes of Russian cuisine. A cold soup of kvass with vegetables was prepared in Rus’ – after all, in the summer such a stew could feed the whole village. Meat products were not yet added to okroshka. Simply because they weren’t as affordable as they are today.

By the way, today many also make a mistake when putting boiled sausages in okroshka. Such an ingredient appeared in okroshka in Soviet times – to save money and time for cooking.

It is better to put boiled or baked beef in okroshka. You can get by with chicken – then the taste will turn out to be more tender.

It is wrong to add to okroshka and boiled potatoes. It overshadows the taste of greens and vegetables and also increases the calorie content of meals. Also, it is believed that you can lose weight with okroshka. But if there is okroshka with potatoes in the composition and with a bite of bread, one should not expect weight loss.

It will not be possible to lose weight on store-bought okroshka seasoned with kvass – with an abundance of sugar in the composition. In general, bottled kvass differs from homemade kvass in taste, color and aroma. So it is better to prepare kvass at home in advance. And if you do not like okroshka with kvass, try this variant of dressing – from which there is no pain in the stomach and bloating.
