Braised veal

Method of preparation

In a pan, heat the oil, brown the ossobuco and set aside. In the same pan, fry the chopped onion, celery, leek and carrot. Return the ossobuco to the pan, season with the wine and season with salt to taste. Add the meat broth and cook over low heat for about 60 minutes. After, add the tomato and cook until the meat is soft. On the side, mix the lemon zest, garlic, red pepper and green odor. Add to pan, stir, and season with salt to taste. Serve immediately.

  • 2 yolks

Sauce

  • 520 g of tomato pulp
  • 1 cup fat-free chicken broth
  • 2 tablespoons of soybean oil
  • 1 chopped onion
  • 1 pinch of sugar
  • Parmesan for dusting

Method of preparation

Pasta

Bring a large pot with water and salt to a boil. In a bowl, mix the potato flakes well with the warm water. Add the flour and other ingredients. Put the mixture into the pastry bag and shape the gnocchi in the boiling water. Remove those that float to the surface with a slotted spoon and drain.

Sauce

In a pan, saute the onion in the oil until it starts to brown. Add the tomato pulp, sugar and chicken broth. Boil and reserve.

Assembly
