Ingredients:
- 12 slices of Italian bread 1 inch thick
- olive oil for greasing
- 3 ripe seedless tomatoes cut into cubes
- 2 tablespoons of chopped basil
- Salt and minced pepper
- 1 and 1/2 cups shredded buffalo mozzarella
black olive paste
- 1 1/2 cups pitted black olives
- 4 tablespoons of olive oil
Method of preparation:
- For the olive paste, beat the ingredients in a food processor or blender and set aside.
- Cut off the end of the garlic clove and spread it all over the bread slices.
- Arrange them in a baking dish greased with extra virgin olive oil.
- Divide the olive paste among the slices.
- In a bowl mix the tomato and basil and season with salt, pepper and olive oil.
- Divide the mixture between the slices of bread.

- 1 1 kg salmon fillet cut into 4 parts
- Salt and white pepper to taste
- 4 tablespoons of butter
Cream
- 2 tablespoons of butter
- 1 tablespoon of wheat flour
- 1 and 1/2 cup (tea) of milk
- 1 and 1/2 cups cooked chopped broccoli
- salt to taste
- 1 box of cream (200g)
Method of preparation:
- For the cream, heat a pan with the butter over medium heat and quickly fry the flour.
- Add the milk, a little at a time, stirring until thickened.
- Add broccoli, season with salt, pepper and stir.
- Add the cream, mix, turn off the heat and set aside.
- Season the salmon with salt and pepper and fry 2 pieces at a time in a skillet over high heat with the butter.
- Arrange on a platter and serve with cream and, if desired, with rice.

- 8 tablespoons of olive oil
- 1 Italian courgette into thin strips
- 1 thinly sliced ​​aubergine
- 1 carrot into thin strips
- salt to taste
- 1 red pepper in strips
- 1/2 yellow pepper into strips
- 2 seedless tomatoes cut into strips
- 1 onion in strips
- 1/2 cup parsley (chopped)
Method of preparation:
- For the filling, heat a large skillet over medium heat with 4 tablespoons of the olive oil, add the zucchini, eggplant and carrot seasoned with salt and saute for 5 minutes.
- Stir in the parsley, remove and set aside.
- Put the pan back on the heat with the rest of the oil, add the peppers, tomatoes and onions seasoned with salt and saute for 3 minutes.
- Combine with reserved vegetables and reserve.
- For the dough, mix the flour, butter, salt, water and egg yolk in a bowl, kneading by hand until a homogeneous mass is formed, adding more water if necessary.
- Open the dough with the help of a rolling pin, line the bottom and sides of a 24 cm diameter buttered cake tin.

Method of preparation:
- Beat the egg whites until stiff, add the yolks, one by one, and 1/2 cup (tea) sugar little by little, until it turns white.
