Banana ingredients:

  • 3-4 silver or dwarf bananas

GLUTEN-FREE BREADING MIX:

  • ΒΌ cup gluten-free all-purpose flour, or enough for dusting
  • 1 egg, diluted in a little filtered water
  • salt
  • pepper (optional)
  • 0.25 teaspoon of paprika
  • ΒΌ cup almond flour
  • ΒΌ cup golden flax meal

PRE-PREPARATION:

  1. Gather all the ingredients and utensils for the recipe.
  2. Peel the bananas. Cut into pieces two fingers thick.
  3. Preheat the oven to 220Β°C.
  4. In a bowl prepare the gluten-free mixture for the breading: combine the almond flour with the flaxseed flour and the paprika and mix well.

PREPARATION:

Baked breaded bananas, gluten-free:

  1. In a bowl put the gluten-free flour, in another the beaten egg with a little water, salt and pepper (optional).
  2. Dip the bananas first in the gluten-free flour (white), then in the beaten egg and then in the gluten-free mixture prepared in the pre-mix.
  3. Squeeze them well so that they are well breaded.
  4. Arrange on one or more buttered trays, without overlapping them.
  5. Drizzle corn oil on each one, in zigzags and with quick strokes.
  6. Cook for 10 minutes. Open, flip the bananas and swirl the pan and continue for another 5 to 10 minutes until golden brown.
  7. Remove, dry with paper towels.

FINISHING AND ASSEMBLY:

  1. Serve the gluten-free baked breaded banana as a side dish for fish, barbecue, feijoada, and even as a snack.
