Shrimp risotto

ingredients

  • 400g of shrimp
  • 2 liters of chicken broth
  • 1 peeled and chopped onion
  • 1 clove of garlic, peeled and crushed
  • 200 g of arborio rice
  • 60 ml of dry white wine
  • 70 g of grated Parmesan
  • Salt, butter, ground black pepper and chopped parsley to taste

Method of preparation

Place the prawns in a bowl and season with salt and pepper. Cover with cling film and leave to rest for 10 minutes. Meanwhile, in a skillet, add the chicken stock and bring to a boil over medium heat. Reserve. Put the butter in a pan and heat over medium heat. Add the prawns and fry until pink, turning to brown both sides. Reserve.

In another pan, put the butter and heat over medium heat. Add the onion and garlic and saute. Add the rice and sauté for 5 minutes. Add the white wine and cook until dry. Gradually add the chicken broth and cook until the rice is tender, stirring constantly. Add the shrimp and cheese and mix well until the cheese melts. Finally add the butter and mix to incorporate it into the other ingredients. Finish with the chopped parsley and serve afterwards.

Tip: serve garnished with prawns.

Eggplant caponata

ingredients

  • 1 aubergine, peeled and chopped
  • 1 zuchinis peeled and chopped
  • 1 peeled and chopped onion
  • 1 red bell pepper, deseeded and chopped
  • 1 clove of garlic, peeled and crushed
  • 1 slice of minced ginger
  • 1 pinch of salt
  • Olive oil, soy sauce, chopped paprika and cane molasses to taste

Method of preparation

Put the aubergines, courgettes, onion, peppers, garlic and ginger in a bowl and mix well. Season with the hot paprika, soy sauce, cane molasses, olive oil, and salt. Next, transfer the mixture to a roast and spread it well. Place in a preheated oven at 180ºC for 25 minutes. Serve immediately.

  • 500 g of soft coxão cut into cubes
  • 500g of Potato peeled and chopped
  • 3 carrots, peeled and cut into rings
  • 1 peeled and chopped onion
  • 1 tablespoon of oil
  • 3 tablespoons of tomato sauce
  • 4 cloves of garlic, peeled and crushed
  • Salt, ground black pepper and chopped chives to taste

Method of preparation

In a pressure cooker, add the oil and heat over medium heat. Add the onion and garlic and saute. Add the beef and saute until light brown. Season with salt and pepper. Add the tomato sauce and cover the ingredients with water. Cover the pan and cook for 25 minutes, after pressing down. Then turn off the heat, wait for the pressure to ease, open the pan and place the potatoes and carrots on top of the meat. If necessary, add more water. Cover the pan again and cook for another 3 minutes, after you’ve achieved pressure. Turn off the heat, wait for the pressure to ease, sprinkle with the chives and serve immediately.

Sausage stuffed with garlic cream

ingredients

  • 250 g of mayonnaise
  • 6 cloves of garlic, peeled and minced
  • 250 g of cottage cheese
  • 1 cup of grated mozzarella
  • 6 chicken sausages
  • Salt, olive oil and chopped parsley to taste
  • grated cheese for sprinkling

Method of preparation

Put the mayonnaise, garlic, ricotta, parsley and mozzarella in a bowl and mix well. Reserve. In a frying pan, put the olive oil and heat over medium heat. Add the sausages and brown on both sides. Turn off the heat, transfer the sausages into a baking dish and, with the help of a knife, make a cut in the center of each one. With the help of a spoon, put a little sauce inside each of them and sprinkle them with grated cheese. Place in a preheated oven at 200ºC for 40 minutes. Serve immediately.
