INGREDIENTS – Chicken bread – Click here to see the shopping list
- 150g chicken breast, cooked and minced
- salt
- 3 egg units
- 3 tablespoons of grated Parmesan
- 1/2 tbsp(s) baking powder
- butter or oil, for greasing
PRE-PREPARATION:
- Start by cooking the chicken to make bread (see preparation).
- Preheat the oven to 180°C.
- Separate other ingredients and utensils from the recipe.
PREPARATION:
Chicken – Cooking (do this step before starting pre-prep):
- Put a pressure cooker on high with water boiling to cook the chicken.
- While the water is boiling, wash the chicken and dry it with a paper towel.
- Place on a cutting board and cut into cubes.
- When the water boils, add salt and put the chicken cubes.
- Cover the pan and when you build up pressure, cook about 10 minutes or until the chicken is very soft.
- Continue pre-preparation.
Chicken Bread:
- When the chicken is cooked through, release the pressure and open the pan.
- Drain and dry the chicken breast with a paper towel – it must be dry.
- With 2 forks or a vertical vegetable masher, coarsely chop, opening the fibers to let the chicken cool.
- In a blender, beat the eggs with the salt.
- Add the chicken breast cut into pieces and the grated cheese and keep beating until you get a very pasty mixture.
- Turn off the blender and mix in the baking soda.
- Grease small trays or refractories (1 per person) with butter or oil (try to leave it at the height of a loaf of bread, choose the shape that best suits this need).
- Divide the dough into molds or refractory and place in a preheated oven at 200°C.
- Cook for about 25 minutes.
Chicken Bread:
- Check the doneness of the chicken sandwich. If it is cooked through and lightly browned, remove it from the oven and let it cool.
FINISHING AND ASSEMBLY:
- serve the chicken bread with the filling of your choice and enjoy without guilt.
