Of the 100 most iconic ice creams in the world, 2 are in Brazil. This is underlined by the list of the gastronomic encyclopedia of Taste Atlas, released yesterday (21). The very Brazilian tapioca and açaí were selected, the first from the Da Ribeira ice cream parlor, in Salvador, Bahia, and the second from the Sorveteria Cairu, in Belém, Pará.

“This list presents the 100 most iconic gelaterias and gelaterias that have left an indelible mark on the global dessert scene. It includes establishments that have been perfecting their art for more than a century, serving ancient flavors such as chocolate and pistachio, or inventive combinations such as ricotta and pear, sesame seeds and rice”, reads the text of the Atlas of Taste.

The choice of açaí and tapioca to represent Brazil, as well as the history of the places where they are served, can also be explained by one of the criteria adopted for the selection. “Each variety has unique characteristics shaped by regional ingredients, techniques and cultural influences.”

With its famous gelato, Italy dominates the list, with 28 establishments and flavors representing the country. The United States appears in second place, with 22 representatives. Our Argentinian brothers beat Brazil by one place, with three representatives on the list, two of which are dulce de leche flavoured.
