Vegan Mac and Cheese, an amazing recipe for the classic macaroni and cheese

The vegan version of the classic American mac and cheese recipe.

Recipe for 2 people.

conventional + blender or food processor

cup = 240ml, spoon = 15ml, teaspoon = 10ml, teaspoon = 5ml

Ingredients Pasta Mac and Cheese Vegan

220 g of vegan snail noodles (or any other of your choice)

salt to taste

extra virgin olive oil to taste

Vegan mac and cheese dip ingredients

1 cup (tea) of sunflower seeds soaked for at least 2 hours

1 tablespoon(s) of olive oil

1 cup (tea) carrots, peeled and thinly sliced

1/2 unit onion, diced

1 stalk(s) celery, coarsely chopped

3 minced garlic cloves

3 cup(s) of water

2 tablespoon(s) cornstarch

1/4 cup (tea) nutritional yeast (optional)

2 tablespoons of tomato paste, preferably organic

1/4 unit(s) Sicilian lemon (juice)

salt to taste

Ingredients for Decorating and Finishing

sweet paprika to taste

PRE-PREPARATION:

1. Put the sunflower seeds to hydrate in a bowl for at least 2 hours. Drain and discard the soaking water.

2. Chop the onion, garlic and celery stalk. Peel and slice the carrots with a knife, peeler or mandoline (optional).

3. Separate other ingredients and utensils from the recipe.

4. Bring a pot of water to a boil to cook the pasta.

PREPARATION:

Vegan Mac and Cheese Dip:

1. Heat the oil in a pan where you can add the cooked pasta.

2. Fry the onion, carrot and celery for a few minutes over low heat until the onion is transparent and the carrot is soft but still crunchy (estimated time 5 minutes).

3. Season with a pinch of salt.

4. Add the garlic and saute for 1 minute.

5. Put out the fire.

6. Put water (see ingredients) at room temperature in a blender or food processor and add to the stew.

7. Add tomato paste, nutritional yeast (optional), cornstarch, and soaked and drained sunflower seeds.

8. Beat until smooth and creamy – this can take up to 5 minutes – pause every minute if your blender doesn’t have much power.

9. Return the sauce to the pan.

10. Cook over medium heat, stirring constantly until thickened, about 15 minutes.

11. At the same time, cook the pasta.

Vegan pasta with mac and cheese:

1. When the water boils, add salt and add the pasta.

2. Cook according to package directions.

3. Drain into a deep skillet, add a drizzle of olive oil to prevent sticking, and set aside.

STARTER OR DESSERT (optional):

If you have chosen to make an appetizer or dessert, take advantage of the cooking time to prepare the sauce and pasta.

Vegan Mac and Cheese Dip:

1. When the sauce thickens, add the lemon juice.

2. Adjust the salt.

Vegan Mac and Cheese:

1. Drain the pasta well (again), put it in the pan where the sauce is.

2. Mix the pasta well with the sauce.

FINISHING AND ASSEMBLY:

1. Serve on a platter or, if you prefer, distribute it on plates, preferably on the bottom.

2. Sprinkle the dough with the sweet paprika.
