Ingredients:

  • 1 skinless chicken breast
  • 2.5 liters of water
  • 1 chicken bouillon cube
  • 4 tablespoons of olive oil
  • 1 chopped onion
  • 3 minced garlic cloves
  • 2 chopped tomatoes
  • 150 g of chopped green beans
  • 2 diced potatoes
  • 1 sliced ​​carrot
  • 1 diced chayote
  • 1 Italian courgette, diced
  • 1 can of drained canned corn
  • 1 cup of uncooked white rice
  • Salt and black pepper to taste
  • Grated Parmesan and chopped chives for dusting

Method of preparation:

  1. In a pressure cooker, place the chicken, water and chicken stock
  2. Cover, bring to medium heat and cook for 20 minutes, after starting the pressure.
  3. Turn it off, let the pressure escape naturally, and open the pan
  4. Remove the chicken from the pan and chop it up, reserving the cooking water.
  5. Meanwhile, in a large skillet over medium heat, heat the oil and saute the onion and garlic for 3 minutes.
  6. Add the tomato and sauté for 3 minutes
  7. Add the reserved cooking water and, as soon as it boils, add the green beans, potatoes, carrots, chayote, zucchini and corn
  8. cook for 3 minutes
  9. Add the rice, the chopped chicken, season with salt and pepper and cook with the pan half open until the rice and vegetables have softened.
  10. Transfer to a deep dish, sprinkle with Parmesan and chives and serve afterwards.
