Chicken soup

Ingredients:
- 1 skinless chicken breast
- 2.5 liters of water
- 1 chicken bouillon cube
- 4 tablespoons of olive oil
- 1 chopped onion
- 3 minced garlic cloves
- 2 chopped tomatoes
- 150 g of chopped green beans
- 2 diced potatoes
- 1 sliced carrot
- 1 diced chayote
- 1 Italian courgette, diced
- 1 can of drained canned corn
- 1 cup of uncooked white rice
- Salt and black pepper to taste
- Grated Parmesan and chopped chives for dusting
Method of preparation:
- In a pressure cooker, place the chicken, water and chicken stock
- Cover, bring to medium heat and cook for 20 minutes, after starting the pressure.
- Turn it off, let the pressure escape naturally, and open the pan
- Remove the chicken from the pan and chop it up, reserving the cooking water.
- Meanwhile, in a large skillet over medium heat, heat the oil and saute the onion and garlic for 3 minutes.
- Add the tomato and sauté for 3 minutes
- Add the reserved cooking water and, as soon as it boils, add the green beans, potatoes, carrots, chayote, zucchini and corn
- cook for 3 minutes
- Add the rice, the chopped chicken, season with salt and pepper and cook with the pan half open until the rice and vegetables have softened.
- Transfer to a deep dish, sprinkle with Parmesan and chives and serve afterwards.
