Easy, practical and economical, this pea soup has a light smoky flavour.

Recipe for 2 people.

Classic (no restrictions), Gluten Free, Gluten Free and Lactose Free, Lactose Free

Preparation: 01:00 + soaking time for peas

cup = 240ml, spoon = 15ml, teaspoon = 10ml, teaspoon = 5ml

Ingredients PEAS SOUP

– 150 g of soaked dry peas
THE

– 2 tablespoons of chopped onion

– 1 clove(s) of minced garlic

– 1 unit of laurel

– 500 ml of boiling water

– olive oil to taste (or oil)

– Salt to taste

– pepper to taste THE

Ingredients SMOKED RIBBON

– 4 pieces of pork ribs

Ingredients TO FINISH

– chopped parsley (optional) (or green onion)

PREPARATION:

  1. Put the dried peas in a bowl, cover them with cold water and leave them to soak for about 4 hours.
  2. After this time, separate the other utensils and ingredients from the recipe.
  3. Put a kettle on the fire with water (see quantity in the ingredients) to boil.
  4. Wash, peel and chop the onion and garlic.
  5. Cut the ribs into strips.

PREPARATION:

  1. Drain the dried peas through a sieve, discard the water in which they were soaked and wash the peas under running water.
  2. Heat a pressure cooker greased with olive oil over medium heat.
  3. Add the smoked ribs and saute until lightly browned.
  4. Add the chopped onion and garlic and sautƩ until the onion is translucent.
  5. Add the drained peas and bay leaf and season with salt and pepper (optional).
  6. Cook, stirring, for 1 more minute.
  7. Add the boiling water, stir and cover the pan.
  8. When it starts to beep, lower the heat and cook for 20 minutes or until peas are soft.
  9. While the soup is cooking, wash and dry the parsley (optional), chop it coarsely and set aside on paper towels.
  10. Turn off the heat, let the pressure escape naturally, and open the pan.
  11. Remove the ribs and reserve them on a side dish.
  12. Discard the bay leaf.
  13. Transfer the soup to the blender or leave it in the pan to use a mixer – if you prefer a more rustic soup, set aside ā…“ of the portion without beating.
  14. Beat until you obtain a smooth and homogeneous cream – add a little more water if necessary to obtain the desired consistency.
  15. Put the soup back in the pot and, if you have opted for a more rustic soup, add the part that has not been beaten.
  16. Optional: cut the pork ribs into medium pieces, removing the bones – this way they are easier to eat. But if you prefer you can serve the soup with whole ribs.
  17. When ready to serve, put the soup back on the heat, add the ribs, bring to a boil and check the salt.

FINISHING AND ASSEMBLY:

  1. Put the pea soup in a deep dish, or, if you prefer, distribute it in deep dishes.
  2. Complete with coarsely chopped parsley (optional).
