Pork loin stuffed with sausage

Time: 2h45 (+10min rest)

Performance: 6 servings

Ingredients:

  • 1 loin weighing approximately 1.2 kg
  • Salt and black pepper to taste
  • 300 g of skinless Tuscan sausage, crumbled
  • 1 clove of minced garlic
  • 1 small onion chopped
  • 1 egg
  • 4 tablespoons of breadcrumbs

Preparation method:

  1. Using a sharp knife, open the loin lengthwise to form a rectangle.
  2. Season with salt and pepper
  3. In a bowl, mix the sausage, garlic, onion, egg and breadcrumbs
  4. Distribute the loin over it and roll up like a roll
  5. Close with toothpicks or tie with string
  6. Place on a baking tray and then cover with aluminum foil.
  7. Bake in a preheated medium oven for 1 hour and 30 minutes
  8. Remove the paper and leave to brown for another 45 minutes at high temperature
