Poke Recipe: Try the Hawaiian dish to cool down

Ingredients:

  • 300 g of fresh salmon
  • 2 ripe avocados
  • 1 cup edamame
  • 1/2 medium red cabbage
  • White sesame to taste
  • Chopped chives to taste (optional)

Rice

  • 2 cups rice for Japanese cuisine
  • 3 cups (tea) of water
  • 2 tablespoons of sugar
  • 2 teaspoons of salt
  • 4 tablespoons rice vinegar

Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger

Preparation method:

  1. Wash the rice under running water for the time necessary for the water to run clear.
  2. Place it in a pan, cover it with water and let it rest for 1 hour
  3. Place over high heat and as soon as it boils, cook for 1 minute and switch to low heat.
  4. Cook the rice for 15 minutes or until the water is almost completely dry.
  5. Turn off and let rest covered for 10 minutes
  6. Dissolve the sugar and salt in the vinegar
  7. Place the rice in a glass or wooden container and pour the seasoning over it.
  8. Using a spatula, use circular motions, fanning the rice with a fan or pan lid to cool.
  9. Cover with a damp cloth and leave to cool completely
  10. In the meantime, dice the salmon and slice the avocado and red cabbage
  11. In a bowl, add the rice to cover the bottom and then add a portion of salmon, avocado, edamame and cabbage
  12. Prepare the sauce by mixing all the ingredients and pouring it over the poke
  13. If desired, sprinkle sesame seeds and chives and serve immediately.
