Mini courgette pizzas with mozzarella: they can be used as an appetizer or side dish, very easy
A pizza without dough, but with the flavor of pizza.

Ingredients for the Mini Courgette Pizza
– 1 unit of courgette, cut into medium slices (5 slices per person)
– olive oil to taste
– Salt to taste
– 1/2 cup(s) of grated mozzarella
– grated parmesan to taste
Ingredients Seasoned Tomatoes
– 3 tablespoons of diced peeled tomatoes
– 1 teaspoon of dried oregano B
– 1 teaspoon(s) of olive oil
– Salt to taste
– pepper to taste B
Finishing ingredients
– basil to taste (leaves)
PREPARATION:
1. Preheat the oven to maximum temperature.
2. Wash and dry the courgettes, remove the ends and cut them, without peeling them, into slices just under 1 cm thick. Cut 5 slices per person.
3. Season the sliced āācourgettes with salt and a drizzle of oil (see preparation).
4. Prepare the seasoned tomato (see preparation).
5. Grate the mozzarella and parmesan, if you didn’t buy them grated.
PREPARATION:
Courgettes (do this step before continuing the preparation):
1. Heat one or more non-stick pans and grease them with olive oil.
2. Place the courgette slices in the pan, one next to the other, without crowding them, and brown them lightly on both sides ā don’t let them darken because they will go in the oven anyway.
3. While the courgettes are browning, start preparing the seasoned tomato, but don’t forget to remove the courgettes when they are golden.
Seasoned Tomato (do this step before continuing the pre-preparation):
1. In a bowl, crush the peeled tomato, preferably with a food mill, until you obtain a not very smooth puree.
2. Add the olive oil and oregano and mix well.
3. Season with salt and pepper.
4. Continue pre-preparation.
Mini courgette pizzas:
1. Turn off the heat on the courgettes.
2. Grease a non-stick baking tray with a drizzle of oil and arrange the courgettes, one next to the other, without crowding them.
3. Cover the slices with the seasoned tomato.
4. Spread the grated mozzarella on top.
5. Sprinkle with grated parmesan.
6. Place in the preheated oven until the mozzarella melts.
FINALIZATION AND ASSEMBLY:
1. Remove the courgette pizzas from the oven.
2. Arrange them on a serving plate or, if you prefer, distribute them among the plates.
3. Decorate with basil leaves.
4. Serve immediately.
