Country lavender soda has become a hit in the SP mountains; see how to do it

Within São Paulo, Cunha is known for its hearty rustic cuisine and extensive lavender plantations. In addition to its therapeutic and cosmetic potential, the plant is also highly appreciated in gastronomy. A good example of this usage is the Lavender country soda, from the Kallas da Serra restaurant. The drink, made from a sweet syrup infused with lavender, is one of the highlights of the oldest commercial establishment on Estrada Cunha-Paraty, which dates back to 1994. To accompany the drink, chef Regina Celia Gonzaga serves canned pork , the flagship of the restaurant and delicacies from the Sao Paulo countryside, such as free-range chicken and pork rinds. Kallas da Serra is one of points of the Vale do Paraíba and Mantiqueira Gastronomic Route, made up of the tourist regions of Mantiqueira Paulista, Fé and Rios do Vale. To discover this and other treasures, the fifth edition of Sabor de São Paulo travels through the municipalities of the region from 1 to 7 October. Thinking of bringing the flavors of the interior of São Paulo to your home, we present the original recipe for caipira soda with lavender. It is a sweet and ideal choice for enjoying typical country dishes.




Lavender country soda

Ingredients:

  • 1l of water
  • 300 g of sugar
  • Lavender sprigs to taste
  • Ice to taste
  • Sparkling water to top up the glass

Preparation method:

  1. For the base, prepare a syrup with water and sugar until a smooth mixture is obtained.
  2. Add the lavender and let steep for 5 minutes to release the flavor
  3. Store in a closed bottle for at least 5 days
  4. To be served in a glass I’m shooting of 300mL, pour in the syrup, add ice and then top up with sparkling water.
