- 4 courgettes
- 1 onion chopped
- 2 crushed garlic cloves

Preparation method
Cut the courgettes in half, lengthwise. Carefully remove the pulp and set aside. In a pan, add water and bring to a boil over medium heat. Add salt and courgettes. Cook until they are al dente. - 390 g of peeled tomatoes

- 1 clove of minced garlic
- 1/2 onion chopped

- 2 tablespoons butter
Preparation method
Pass the courgettes through a julienne cutter, discarding only the part with the seeds. In a pan, heat the oil and butter over medium heat and brown the onion. Add the courgettes and brown them over low heat. Season with salt and set aside.
Sauce
In a blender, blend the peeled tomato until you obtain a smooth mixture. In a pan, heat the olive oil over medium heat and add the garlic clove and onion. Fry until golden brown. Add the blended tomato, salt, sugar and black pepper. Shake well. When it boils, add the butter. Stir again so that the butter melts. Serve the sauce with courgette spaghetti.

Zucchini Biscuit
ingredients
- 1 courgette, peeled and cut into cubes
- 3 eggs
- 1/2 cup mashed tofu
- 1/2 cup tea cooked chickpeas
- 1/2 cup olive oil
- 1/2 cup soy milk
- 1 1/2 cups oat flour
- 1/2 cup whole wheat flour
- 1 tablespoon baking powder
- 1 tablespoon chopped parsley
- 1 pinch of salt
Preparation method
In a blender, blend half the zucchini, tofu, eggs and olive oil. Transfer the mixture into a large container. Gradually add the soy milk, oat flour and wholemeal flour and mix well. Add the salt, parsley, the rest of the courgettes, the chickpeas and the yeast and mix again. Place the mixture into the cupcake molds and bake in the preheated oven for 25 minutes. After this period, remove from the oven and serve.
