Sardine couscous: try the Sao Paulo version which is very tasty

Sardinian couscous recipe

Preparation time: 45 minutes (+5 minutes rest)

Performance: 8 servings

Difficulty level: easy

Ingredients:

  • 4 tablespoons of oil
  • 1 glass of chopped hearts of palm (300 g)
  • 1 can drained green corn
  • 1/2 can drained peas
  • 1/2 cup sliced ​​green olives
  • 2 small cans of sardines in oil, drained and cleaned
  • 1 chopped tomato
  • 1/2 cup (tea) tomato sauce
  • 1 cube of vegetable broth
  • 1 1/2 cups (tea) warm water
  • 3 cups (tea) cornmeal
  • Salt to taste
  • Greasing oil
  • 1 sliced ​​tomato for garnish
  • 1 sliced ​​boiled egg for decoration
  • Sliced ​​green olives for garnish
  • Drained and cleaned sardines for decoration

Preparation method:

  1. Heat a pan with oil over medium heat and fry the onion until softened.
  2. Add the hearts of palm, corn, peas, olives, sardines, tomatoes and sauté for a few minutes.
  3. Add the sauce, the vegetable broth dissolved in the water and cook for 3 minutes.
  4. Mix the flour and salt.
  5. Decorate the bottom and edge of a 24cm diameter baking pan with a hole in the centre, greased with tomato, egg, olives and sardines.
  6. Pour the couscous into the mold, pressing with a spoon, and let it rest for 5 minutes.
  7. Turn out onto a plate and serve.
