The traditional gluten-free and lactose-free lemon cake, but no one notices, it looks the same
A very soft, tasty and gluten-free cake, with a delicious lemon cape.

Ingredients Basic dough for gluten-free and lactose-free cakes:
– 200 g of lactose-free butter + a little to grease the pan.
– 2 cups of sugar
– 4 units of eggs, separated whites and yolks.
– 1 cup(s) of lactose-free whole milk (or other milk of your choice)
– 3 1/2 cups premium gluten-free blend
– salt to taste (pinch)
– 1 tablespoon(s) of chemical yeast THE
Ingredients (variation) – Lemon cake
– 1 unit of lemon (juice and zest)
Ingredients for the lemon glaze
– 1 cup(s) of powdered sugar
– 1/2 unit of lemon (juice)
– 1 tablespoon (soup) of water or enough to clarify the point.
PREPARATION:
- Remove the butter from the fridge 1 hour before to bring it to room temperature.
- Separate all ingredients and utensils for the recipe.
- 1 whole recipe is equivalent to a portion for 4 people.
- In two separate bowls the egg yolks and whites.
- Sift the gluten-free flour mix (for this recipe we use Schar’s premium mix flour).
- Wash and dry the lemon, remove the zest from the peel and set it aside on absorbent paper.
- Squeeze lemon juice over the cake and frost.
- Grease a mold with lactose-free butter and sprinkle it with the gluten-free flour mix.
- Preheat the oven to 180°C.
PREPARATION:
Gluten-free and lactose-free lemon cake dough:
- Mix the lactose-free milk with the lemon juice and set aside.
- If your butter is not at the point of ointment, beat with a wire whisk until it is soft, only then continue, adding the sugar, beating until you obtain a whitish cream.
- Add the egg yolks, one at a time, and continue beating to combine.
- Turn off the mixer and wash the whisk.
- Using a spatula or a whisk, gradually add the gluten-free flour mix and the milk with the lemon, beating until you obtain a smooth cream.
- In another bowl, using a mixer, beat the egg whites with a pinch of salt until a frothy mixture forms.
- Add the yeast and lemon zest to the dough.
- Then incorporate the egg whites, with circular movements, from the center outwards, taking care to keep the mixture airy.
- Transfer the dough into the pan, already greased and floured.
- Place in the preheated oven at 180°C and cook for about 45 minutes.
Lemon glaze:
- While the cake is baking, sift the icing sugar into a bowl.
- Add the lemon juice to the sugar and mix well.
- Gradually add a little water, mixing until you obtain the desired consistency.
Gluten-free and lactose-free lemon cake:
- After this time, test with a toothpick, insert it into the center of the cake and if it comes out clean, it is ready.
- Remove from the oven, shake the pan slightly to see if the cake loosens.
FINALIZATION AND ASSEMBLY:
- Invert onto a plate or cutting board.
- Invert the cake onto the platter or serving platter you will serve it on.
- Spread the lemon icing over the cake.
