BANANA BISCUIT WITH OATS Ingredients:
– 3 very ripe silver bananas
– 1 tablespoon(s) lactose-free butter (or clarified butter)
– 1 tablespoon(s) sugar cane honey (sugar cane molasses)
– 1 unit of egg, only the yolk(s).
– powdered ginger to taste (a pinch) THE
– 1 teaspoon(s) of ground cinnamon
– nutmeg to taste, grated.
– 1 teaspoon(s) of vanilla essence
– 1 1/4 cup oat bran
– 2 tablespoons of corn starch
– 1/2 teaspoon(s) of sodium bicarbonate THE
– salt to taste (pinch)
– 50 g of gluten-free and lactose-free chocolate, chopped or diced.
Ingredients TO FINISH
– gluten-free and lactose-free chocolate to taste, chopped or in calletti.
PREPARATION:
- Separate the recipe ingredients and utensils.
- Chop the chocolate unevenly or use the flakes.
- Remove the lactose-free butter from the refrigerator to facilitate preparation. Leave it in an ointment spot.
- For one recipe (2 people) the expected yield is 20 biscuits, measuring 5 cm each.
- Line one or more shallow baking trays with baking paper or a silicone mat. If necessary, spread a little lactose-free butter or ghee on top to grease it.
PREPARATION:
Dough – Banana and Oat Biscuit:
- Peel and mash the bananas in a shallow dish.
- Add to the bananas, salt, cinnamon, ground ginger (optional), grated nutmeg (optional), vanilla essence and sugarcane molasses.
- Separate the yolk from the white. In a bowl, add egg yolks and butter or lactose-free ghee until smooth.
- Then add the mashed banana mixture.
- Add the oat flour and corn starch and mix everything together.
- Finally add the baking soda, mix well to combine.
- Mix with chopped chocolate or chocolate chips.
- Using a standard ice cream scoop (optional), shape into balls and place them in the molds, leaving a distance of 3 fingers between them.
- Leave in the refrigerator for 1 hour or as long as it takes to harden.
Banana Oatmeal Cookie – COOKING:
- With 15 minutes left in the fridge, preheat the oven to 190°C.
- Arrange the biscuits into more perfect circles and flatten the top.
- Finish with a few drops of chocolate.
- Bake for 10 minutes, or until the dough is dry on top (it will still be soft).
- Melt some butter or lactose-free ghee.
- Remove from the oven, turn over and brush the melted butter over each biscuit.
- Return to oven to brown.
- Once they are firm and lightly golden, turn off the oven and remove the biscuits.
- Let it cool for 5-10 minutes.
- Transfer to a wire rack and let cool completely.
FINALIZATION AND ASSEMBLY:
- Once cool, store the oatmeal and banana biscuit closed in an airtight container.
- Since there is not much butter in its composition and it has a softer texture with more moisture, it lasts 3 days at room temperature.
- Serve as an accompaniment to coffee or an afternoon snack.
