The classic beef stroganoff recipe, with a very creamy sauce, made without cream.

Ingredients MEAT STROGONOFF (LACTOSE FREE)
– 400 g of fillet mignon, cut into medium cubes. (or rump)
– 150 g of sliced Parisian mushrooms
– 2 tablespoons clarified butter (or olive oil)
– 2 tablespoons of chopped onion
– 2 cloves of garlic
– 1 teaspoon(s) of Worcestershire sauce
– 75 ml of cognac (or cachaça)
– 1 tablespoon(s) of tomato paste THE
– 1 spoon(s) of ketchup THE
– 1 teaspoon mustard (or Dijon mustard) THE
– 350 ml of vegetable culinary cream
– Salt to taste
– pepper to taste

PREPARATION:
- Separate all ingredients and utensils for the recipe.
- Trim the meat from all visible fat, cut it into medium cubes, place it in a bowl, season with salt and pepper, mix well and set aside.
- Wash, peel and chop the onion and garlic.
- Cut the marinated mushrooms into slices, place them in a colander, wash them under running water and let them drain.
PREPARATION:
Lactose-free beef stroganoff:
- Heat half the ghee or olive oil in a pan over high heat.
- Add the meat cubes and fry until the entire surface is golden. Depending on the quantity of meat you will use, carry out this step gradually so that the meat does not release its liquids and cooks instead of browning.
- Remove the meat from the pan and reserve it on an auxiliary plate.
- In the same pan, add the remaining ghee or olive oil over medium heat.
- Add the onion and garlic and sauté until wilted and translucent, about 3 minutes.
- Transfer the meat cubes back to the pan and scrape the bottom with a spatula or wooden spoon to loosen any meat residue and incorporate the flavors.
- Bring the heat back to high and, when the meat is hot, pour in the brandy or cachaça and stir until all the alcohol has evaporated.
- Lower the heat to medium and add the Worcestershire sauce, tomato paste, ketchup and mustard and cook for 2 minutes, stirring well.
- Add the sliced mushrooms and mix again.
- Add the non-dairy cream, stir and cook, over low heat, for about 5-10 minutes to allow the sauce to thicken and thicken slightly.
- Check the salt and pepper.
- Turn off the fire.
FINALIZATION AND ASSEMBLY:
- Arrange the lactose-free beef stroganoff on a serving plate, or, if you prefer, distribute it among the plates.
- Complete with chopped parsley (optional).
