Preparation method
Under running water, wash the sea bass steaks, dry them and, in a container, season them with salt, coriander and garlic. Reserve. Add the olive oil to a pan and arrange the vegetables and fish on top, alternating layers. Finish with coconut milk and palm oil. Cook over high heat until boiling. Lower the heat, cover the pan and cook until the fish is tender. Add the chilli, adjust seasoning and sprinkle with coriander. Serve immediately.
Bean tutu – Minas Gerais
ingredients
- 3 bean shells cooked with broth
- 1 tablespoon of oil
- 1 pepperoni sausage cut into slices
- 1 cup chopped bacon
- 1 cup cornmeal
- Salt and ground black pepper, chopped parsley and chives to taste
- Fry oil
Preparation method
In a pan, add the oil and place over medium heat to heat. Add the sausage and bacon and fry until golden brown. Turn off the heat and set aside. Place the beans in the blender and blend quickly. Then transfer the beans to a pan, add the sausage and bacon and season with black pepper and salt. Place over medium heat to cook. Gradually add the corn flour and mix well. Leave to cook for 5 minutes after boiling. Finally add the parsley and chives and mix well. Cook the tutu until it thickens and then serve.
Facing Sao Paulo – St. Paul
ingredients
- 3 tablespoons of olive oil
- 2 tablespoons peeled and chopped onion
- 2 cloves of garlic, peeled and crushed
- 1 1/2 cups cooked beans with broth
- 1/2 cup tea cassava flour
- 200 g sliced pepper sausage
- 2 pork chops
- Salt to taste
- 1 bunch kale, very finely chopped
- 1 banana, peeled and sliced
Preparation method
In a pan, add a tablespoon of olive oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the beans with the broth and, little by little, add the cassava flour. Lower the heat and fry until the flour is cooked, stirring constantly. Turn off the heat and set aside.
In a pan, add a tablespoon of olive oil and place over medium heat to heat. Add the sausage and grill. Turn off the heat, transfer to a container and keep aside. Salt the steaks and, in the same pan where you fried the sausage, add another tablespoon of olive oil and heat over medium heat. Arrange the steaks on top and fry them well. Carreteiro rice – Rio Grande do Sul
ingredients
- 1/2 cup tea Bacon dice
- 200 g chopped pepper sausage
- 1 clove of garlic, peeled and crushed
- 1 onion peeled and chopped
- 200 g of cooked and chopped dried meat
- 2 skinless tomatoes, seeded and chopped
- 1 1/2 cups uncooked rice
- 1 teaspoon of salt
- 3 cups boiling water
- 1 tablespoon chopped chives
Preparation method
In a pan, add the oil and place over medium heat to heat. Add the bacon and sausage and fry until golden brown. Add the garlic, onion and dried meat and sauté for a few minutes. Add the tomatoes, rice, salt and boiling water. Partially cover the pan and cook until the water dries up and the rice is cooked. Turn off the heat, cover the pan completely and set aside for 5 minutes. Then add the chives and serve immediately.
Chicken in sauce with pequi -Minas Gerais
ingredients
- 2 kg of chicken In pieces
- Salt, ground black pepper and chopped green chillies to taste
- 2 tablespoons of oil
- 1 onion peeled and chopped
- 2 cloves of garlic, peeled and chopped
- 1 teaspoon of saffron
- 1 liter of water
- Pequis canned to taste
Preparation method
In a container, place the chicken and season with salt and black pepper. Next, add the oil to a pan and place it over medium heat to heat it. Gradually add the chicken and brown. Add the onion, garlic, black pepper and saffron and sauté for 5 minutes. Add the pequi and cook until the water is almost completely dry. Turn off the heat, transfer to a serving plate and serve sprinkled with green perfume.
