Egg salad ingredients

– 5 units of eggs

– 1 teaspoon(s) of vinegar THE

– 3/4 cup(s) of mayonnaise B

– 1 teaspoon(s) of yellow mustard ab

– 1 and 1/2 tablespoons of grated onion

– 1 tablespoon of celery cut into very small cubes

– 1/4 unit of chili pepper, seedless, chopped

– 1 tablespoon chopped parsley

– Salt to taste

– pepper to taste THE

Ingredients for the rocket salad

– 1 1/2 cups mini arugula

– extra virgin olive oil to taste

– Salt to taste

– pepper to taste THE

Finishing ingredients

– freshly ground black peppercorns to taste

PREPARATION:

1. Separate all the ingredients and utensils for the recipe.

2. Start by cooking the eggs (see preparation).

3. Wash the mini rocket and soak it in a bowl with a sodium hypochlorite solution.

4. Disinfect and cut all other ingredients. Peel and grate the onion. Wash and cut the celery into very small cubes. Wash and chop the chilli pepper. Wash, dry and chop the parsley.

PREPARATION:

Egg mayonnaise (this step must be done before starting pre-preparation):

1. Place the eggs in a pan with water and vinegar and bring to the boil.

2. When the water boils, cook for 9 minutes.

3. Continue pre-preparation.

Egg:

1. Remove the eggs from the boiling water and place them in a bowl of cold water.

2. Set aside.

Egg mayonnaise:

1. In a bowl, mix the mayonnaise and mustard until well incorporated.

2. Add the grated onion and chopped celery, chilli pepper and parsley and mix.

3. Season with salt and pepper.

4. Remove the eggs from the water, peel them and cut them into cubes.

5. Carefully mix the eggs with the flavored mayonnaise, being careful not to break them.

6. Set aside.

Srocket wing:

1. Remove the rocket from the hypochlorite solution, wash it under running water, drain it and dry it or centrifuge it.

2. Place in a bowl and, when ready to serve, season with salt, pepper and extra virgin olive oil.

FINALIZATION AND ASSEMBLY:

1. Place the egg mayonnaise and the rocket salad on one side of the plates, next to the main course.

2. Grind the black peppercorns into the mayonnaise.
