  • 1 salmon fillet
  • 6 pieces of mini zucchini
  • 7 mini carrots
  • 5 pieces of mini radish
  • 1 drizzle of olive oil
  • 2 pinches of Himalayan salt
  • 2 sprigs of chervil or parsley
  • 1 pinch of black pepper

Method of preparation

Clean the mini vegetables and remove a thin layer from the ends, then steam them. Remove the mini vegetables from the steam and pour them into cold mineral water, blanch them, then drain. Put a pinch of salt on the skin of the fish. Now take a pan and leave it on high heat, until the surface is very hot. Place the salmon skin side down, grill it. When the fish is almost half cooked, add another pinch of salt and a pinch of black pepper, carefully with two heat-resistant silicone spatulas, turn the salmon and grill it on the other side.   • 2 white as snow
  • 1 kg of salmon fillets
  • 2 cups of potato straw
  • Salt and black pepper to taste
  • 2 cups of balsamic vinegar (balsamic vinegar)
  • 8 tablespoons of corn glucose

Method of preparation

Season the salmon fillets with salt, pepper and set aside. Pass the fillets in the egg whites and potato straw, pressing well. Transfer to a 35cm x 25cm pan lined with aluminum foil and bake in a preheated medium oven for 20 minutes.

  • 4 salmon fillets
  • Salt and black pepper to taste
  • 2 tablespoons of butter
  • 2 tablespoons of grated onion
  • 1/2 cup of concentrated Sicilian lemon juice
  • 1 vegetable stock cube
  • 1/3 cup (tea) + 1 tablespoon of water
  • 1 teaspoon of cornstarch
  • Lemon zest for garnish

Method of preparation

Season the salmon with salt and pepper.

In a large skillet over medium heat, melt the butter and brown the salmon for 4 minutes on each side so that the center is moist.

Transfer to a plate and keep warm.

Fry the onion for 3 minutes in a pan, pour the lemon juice and the dissolved vegetable broth in 1/3 cup (tea) of the water and cook for 5 minutes.

Season with salt, pepper and add the cornstarch dissolved in the remaining water, stirring constantly, until it thickens.

Pour over the salmon and serve, garnished with lemon zest.

  • 6 large black cabbage leaves
  • 6 medium pieces of salmon
  • 1 tablespoon of ready garlic, salt and pepper
  • 4 tablespoons of olive oil
  • 5 tablespoons of melted butter

Method of preparation

Remove the cabbage stalks, put them in a pan with hot water and leave to rest for 2 minutes. Remove from the oven, drain and allow to cool.

  • 4 tablespoons of butter

Cream

  • 2 tablespoons of butter
  • 1 tablespoon of wheat flour
  • 1 and 1/2 cup (tea) of milk
  • 1 1/2 cups chopped broccoli (cooked)
  • Salt to taste
  • 1 box of sour cream (200 g)

Method of preparation

For the cream, heat a pan with the butter over medium heat and quickly fry the flour. Gradually add the milk, stirring until it thickens. Add the broccoli, season with salt, pepper and mix.

Add the cream, stir and turn off the heat. Reserve. Season the salmon with salt and pepper and brown it 2 pieces at a time in a pan over high heat with the butter. Arrange on a serving dish and serve with the cream and rice to taste.
