Filling
- 1kg beef muscle in large pieces
- 2 short rib bouillon cubes
- 1 tablespoon olive oil
- 1 grated onion
- 2 cloves garlic, minced
- 2 tablespoons of tomato paste
- 5 tablespoons chopped chives
- 1 tablespoon breadcrumbs
- 1 cup ricotta (200 g)
Pasta
- 4 organic yeast tablets (60g)
- 1/2 tablespoon of sugar
- 2 cups of hot milk
- 6 cups (tea) of wheat flour
- 1/2 tablespoon salt
- Wheat flour for flouring and dusting
- Oil and wheat flour for greasing
- 1 egg yolk for brushing
- 1 tablespoon water for brushing
- 1 tablespoon toasted sesame seeds for sprinkling
Preparation method:
- For the filling, place the pressure cooker on medium heat, add the beef and rib broth, cover with water, cook for 15 minutes and set aside.
- For the dough, in a bowl, mix the yeast with the sugar until it dissolves.
- Add the milk and, little by little, add the flour and salt.
- Knead the dough well.
- Place it in a large bowl sprinkled with flour, cover with a clean, dry cloth.
- Leave to rest for 1 hour or until doubled in volume.
- In the meantime, drain and chop the meat.
- In a pan, over medium heat, heat the oil and brown the onion with the garlic.
- Add the meat and tomato paste.
- Turn off the heat and mix in the chives, breadcrumbs and finally the cream cheese.
- Divide the dough to make it easier to work with and roll it out with a rolling pin on a floured surface.
- Cut into large triangles and place portions of meat.
- Roll up from the base and pull the end, fixing it so that it is downwards in contact with the large greased and floured baking tray.
