Savory cheese panettone recipe

Preparation time: 1h (+1h30 rest)

Performance: 12 servings

Ingredients:

  • 1 pack of instant dry yeast
  • 1 tablespoon of sugar
  • 4 cups (tea) wheat flour (500 g)
  • 1 teaspoon of salt
  • 1 lightly beaten egg
  • 1/4 cup oil (tea) (70 ml)
  • 1 egg yolk for brushing
  • 1 tablespoon water for brushing

Filling and covering

  • 200 g of provola
  • 1 slice of minced pepperoni sausage
  • 4 tablespoons of green perfume

Preparation method:

  1. In a container mix the yeast with the sugar, 4 tablespoons of milk and 2 tablespoons of flour.
  2. Cover the mixture and let it rest for 5 minutes.
  3. Place the rest of the flour in a container, make a well in the center and add the yeast mixture, the rest of the milk, the egg and the oil.
  4. Mix well, incorporating the flour little by little, work the dough until it is smooth and homogeneous.
  5. Cover and let rest until doubled in volume, about 40 minutes.
  6. Grate 1/4 cup provolone and cut the rest of the cheese into cubes and set aside.
  7. To assemble, gently work the dough and add the diced provola and the other filling ingredients.
  8. Mix gently until the mixture is smooth.
  9. Form a ball, brush it with the egg yolk mixed with water and sprinkle with the grated provola.
  10. Arrange in panettone molds, cover and leave to rest for 30 minutes.
  11. Bake in a preheated medium oven for about 25 minutes or until golden brown.
