Cod with potatoes

ingredients

  • 2 stations cod desalted
  • Water for cooking
  • 3 bay leaves
  • 4 cloves of garlic, peeled and chopped
  • 4 potatoes with peel
  • 1 tablespoon of rosemary
  • Salt to taste
  • 400 g of broccoli florets
  • 1 onion peeled and cut into slices
  • 100 g of Portuguese olives
  • 1 hard boiled egg cut in half
  • Olive oil for sautéing

Preparation method

Place the cod fillets in a pan and cover them with water. Add the bay leaves and garlic and cook over medium heat for 8 minutes. Next, turn off the heat, drain the cod and set it aside. Add the potatoes to the same water as the cod and cook over medium heat until tender. Then repeat the same process with the broccoli florets.

Next, put the oil in a pan and place it over high heat to heat it. Place the cod fillets in the pan and fry for 2 minutes. Then turn off the heat, transfer the cod into a mold and place it in a preheated oven at 180°C for 10 minutes. In the meantime, fry the potatoes over medium heat in the same oil in which you fried the cod fillets. Season with rosemary and salt. Reserve. Finally, brown the onion in the same oil and add it to the cod. Serve the cod accompanied by potatoes and broccoli and garnish with olives and a hard-boiled egg.

Stuffed loin

  • 2 kg of pork loin
  • 300 g of sliced ​​ham
  • 300 g of sliced ​​mozzarella
  • 150 g of Bacon sliced
  • 150 g of olives
  • 1 onion peeled and sliced
  • Salt, ground black pepper, oregano and olive oil to taste

Preparation method

Using a knife, cut the loin into a large, even steak. Next, poke small holes in the meat, place it on a baking tray and season it with salt and black pepper. Top with ham, cheese, bacon, olives and onion. Drizzle with olive oil and sprinkle with oregano. Then roll the loin like a roll, leaving the end facing down, so it doesn’t come loose.

Then wrap the loin in aluminum foil, place it on a baking tray and cook in a preheated oven at 200ºC for 45 minutes. Remove the aluminum foil, baste the loin with its own broth and put it back in the oven to brown. Water again every 5 minutes, when the broth has dried completely and is ready to serve.

  • 1 breast of chicken grilled cut into strips
  • 1 cup grated Parmesan cheese
  • 2 cups croutons

Sauce

  • 1/2 cup olive oil
  • 1 egg yolk
  • 2 cloves of garlic, peeled and crushed
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon of juice of lemon

Preparation method

In a salad bowl, place the lettuce leaves and chicken and mix well. Reserve. Place all the sauce ingredients in a blender and blend until you obtain a smooth consistency. Then sprinkle the salad with the mixture, sprinkle with the grated cheese and cover with the croutons. Serve immediately.

  • 1 seedless green pepper cut into cubes
  • 1 seedless red pepper cut into cubes
  • 1 seedless yellow pepper, cut into cubes
  • 1 onion peeled and chopped
  • two eggplant peeled and cut into cubes
  • 1 cup raisin tea
  • 1 cup pitted olives
  • Salt, oregano and olive oil to taste

Preparation method

Place all the ingredients in a pan and mix well. Then bake in a preheated oven at 180ºC for 1 hour and 30 minutes, stirring every 30 minutes. Turn off the oven, wait for it to cool and place in the refrigerator until ready to serve.
