Lentil salad with cod and vegetables
Time: 40 minutes (+6 hours of soaking)
Performance: 6 servings

Ingredients:
- 1 1/2 cups lentils
- 2 cups desalted and cooked flaked cod
- 1 cup cherry tomatoes (cut in half)
- 1 diced red onion
- 1 grated carrot
- Salt, black pepper, chopped green chilli and olive oil to taste
- Mimosa lettuce leaves to decorate
Preparation method:
- Cover the lentils with water and leave them to soak for 6 hours.
- Drain them, put them in a pan with water, season with salt and cook for 20 minutes over medium heat or until tender.
- Drain, let cool and transfer to a bowl.
- Mix with cod, tomato, onion, carrot and season with salt, pepper, green chilli and olive oil.
- Line a plate with lettuce leaves, arrange the salad on top and serve immediately.
