cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
FRUIT Ingredients:
– 1/2 unit of pineapple, cut into cubes
– 1 unit of mango, ripe but firm, peeled and cut into cubes
– 1 unit of orange, peeled, in segments cut in half (to be used instead of mango) (or ponkan type mandarin)
– 2 kiwis, ripe, cut into cubes
– 12 strawberries, cut in half
– fresh blueberries to taste (or seedless grapes)
Sweet balsamic vinegar vinaigrette ingredients:
– 2 tablespoons of balsamic vinegar

– 6 tablespoons of oil
– 2/3 spoon(s) of honey
– Salt to taste
Sweet mint vinaigrette ingredients:
– 2 tablespoons of white wine vinegar
– 4 tablespoons of oil
– 2 tablespoons of xylitol (or anything else of your preference)
– mint to taste (chopped leaves)
PREPARATION:
- The selection of fruits indicated in the ingredients is a suggestion, you can swap them with others of your preference.
- You can serve the skewers accompanied by the 2 vinaigrettes or, if you prefer, choose one. The vinaigrettes can be made in advance and stored in the refrigerator until ready to use.
- Separate the ingredients and utensils for the recipe.
- Wash, dry and chop the mint leaves and set them aside on absorbent paper (optional).
PREPARATION:
Sweet balsamic vinegar vinaigrette:
- In a bowl or glass with a lid, place the honey, add the balsamic vinegar and stir until the honey melts.
- Add the salt and oil and if you use the bowl, use a wire whisk or a fork or, in the case of the glass, close it with the lid.
- Whisk or shake to emulsify the sauce.
- Store at room temperature or in the refrigerator until ready to serve (prepare overnight).
Sweet mint vinaigrette:
- In a bowl or glass with a lid, mix together the vinegar, oil, and xylitol (or other sweetener of your choice).
- If you use a bowl, use a wire whisk or a fork or, in the case of a glass, close it with the lid.
- Whisk or shake well to emulsify the sauce.
- Add the chopped mint, mix.
- Store at room temperature or in the refrigerator until ready to serve (prepare overnight).
Fruit skewers:
- When assembling the skewers, wash and peel the fruit.
- Cut the pineapple, mango (optional) and kiwi into cubes.
- Cut the orange or mandarin segments in half.
- Cut the strawberries in half.
- Leave the blueberries whole, but if you use seedless berries, depending on their size, cut them in half.
- Arrange the fruits on the skewers, spacing them out.
- Arrange on a serving plate and store the skewers in the refrigerator covered with cling film.
FINALIZATION AND ASSEMBLY:
- If you have prepared the sauces in advance, remove them from the fridge 1 hour before serving to let them reach room temperature.
- Serve the Fruit skewer(s). on the plate or distribute among the plates.
- Whisk or shake the vinaigrette again to emulsify it again.
- Serve the vinaigrette in gravy boats.
- Season the fruit with the vinaigrette.
