Flavors such as wild cassava, corn and guava flavor the creations of the fascinating padoca




Five types of brioches, two baguettes, croissants, chocolate pain, but also Romeo and Juliet pain, maniva bread, fruit with peach and corn, delicious bread and Serra da Canastra cheese. New to Jardins, Vivant is the embodiment of the artisanal baking idea of ​​André Cunha, a Rio photographer turned baker.

His desire for change was helped by his uncle, who throughout his childhood was the “Portuguese of the pastry shop”, by his grandmother’s sweets and by training at the Cordon Bleu. The idea was brought to fruition by the consultancy of the maître boulanger Felipe Oliveira, who took care of the bakeries of luxury hotels in São Paulo, such as Emiliano, Tangará and Rosewood.

“Basically our recipes come from French patisserie and we try to use regional products as a differentiator,” explains André. In this sense he uses French flour. With it and some tucupi, he gave birth to the house’s levain (sourdough). With it and with at least 12 hours of patience, he revives the aforementioned breads, which are displayed on an old counter.

Maniva sourdough (R$25), for example, is made with ground cassava leaf paste. The scent is even reminiscent of maniçoba, the most famous of Pará’s stews: “I simply don’t recommend it for breakfast, but it is a bread that goes well with a little olive oil, with orange jelly and also to accompany soups and salads .”

The corn one (R$18), in turn, is a variant of the brioche and one of the best-selling items, together with the classic croissant (R$12.50). Speaking of viennoiserie, the Brazilian accent is evident in the pain with guava and white cheese (R$ 13.50), but also in the peppers and hinoise cheese (R$ 9).

Seen from afar, André’s little house could be in Provence, in the south of France. Once inside, however, the aromas and flavors are rewarding: Vivant could only be in Brazil. The proof is the delicious bread, this buttery Bahian loaf, dusted with parmesan, that melts in your mouth.

“I am in love with this bread and it works very well near a school, because children ask for it a lot.” A warning emerges from the baker’s comment: avoid the departure times of the Colégio Dante Alighieri because the queues tend to be huge.
