Ingredients:
- 1 diced cooked beetroot
- 2 cups (tea) of wheat flour
- 1 cup and 1/2 cup (tea) milk
- 1/2 cup (tea) oil
- 3 eggs
- 1 teaspoon of salt
- 1 cup grated mozzarella for sprinkling
- Butter for greasing
Filling
- 3 tablespoons of oil
- 1 onion chopped
- 3 cloves garlic, minced
- 1 seedless tomato chopped
- 600 g of minced meat
- 1 cube of meat broth
- 1 glass of chopped hearts of palm (300 g)
- Salt, black pepper and chopped parsley to taste
Sauce
- 3 tablespoons butter
- 1/2 onion chopped
- 2 tablespoons of wheat flour
- 2 cups milk (tea)
- Salt and grated nutmeg to taste
- 1/2 cup cream (tea).
Preparation method:
- For the filling, in a pan, heat the oil over medium heat and brown the onion and garlic for 3 minutes.
- Add the tomato, the minced meat, the meat broth and brown for 5 minutes, stirring.
- Add the hearts of palm and season with salt, pepper and parsley.
- Turn off and set aside.
- For the sauce, heat a pan with butter over medium heat and fry the onion until golden brown.
- Add the flour and fry for 1 minute.
- Add the milk little by little, stirring constantly until it thickens.
- Season with salt and nutmeg and turn off the heat.
- Mix with the cream and set aside.
- For the dough, blend the red beetroot, flour, milk, oil, eggs and salt in a blender until you obtain a smooth mixture.
- Heat a medium-greased pan over medium heat and add a medium ladle of batter.
- Rotate to coat the entire bottom and fry for 2 minutes on each side or until done and golden.
- Repeat the process until the dough is used up.
- Divide the filling between the masses and roll up like a roll.
- Place in a medium baking dish, pour over the reserved béchamel sauce, sprinkle with mozzarella and bake in a medium preheated oven for 15 minutes or until golden brown.
