Chef Gil Guimarães was born in Minas Gerais but has adopted Brasilia as his favorite city. With many delicious restaurants ranging from fine cuisine to homemade dishes from all over Brazil, the chef of Casa Baco – a restaurant with a Brazilian flavor and attention to the ingredients of the cerrado – suggests five unmissable restaurants to taste the best of the cuisine of the country’s capital .
Don Francesco
With appetizers, salads, meats, fish and delicious desserts, Dom Francisco is created by chef Francisco Ansiliero, considered by Guimarães to be “a master” of food. Gil Guimarães recommends the cod (R$ 215), the picanha (R$ 290) and the tambaqui (R$ 96) as good house classics and says that “the wine list is one of the best in the country”. “At 84 years old, Francisco is more modern than most chefs and crosses the products of the cerrado and the Amazon with incredible ease,” he comments.

Xique Xique
“Who would have thought that sun-dried meat would be one of the city’s signature dishes,” jokes Guimarães. For those who love good north-eastern cuisine, Xique Xique is the right choice. Among appetizers, main courses, executive dishes and well-served dishes perfect for sharing with several people, the chef highlights the Carne de Sol Complete (R$ 181), a “city institution” that offers sun-dried meat, green beans, paçoca, cooked meat cassava, rice, bottled butter and green perfume.

Quituart
For a weekend trip, the Quituart gastronomic center is a great option to discover different points of Brasilia gastronomy. It includes “Toca do Chopp”, with excellent snacks by chef Claude Capdeville, and the delicious “Afeto”, by Babi Frazão, winner of the professional MasterChef.
Also present at the fair were the “Le Birosque” It’s worth a visit. Dedicated to pork, chef Luiz Trigo’s Le Birosque restaurant serves incredible dishes, especially porchetta (R$68) and bacon (R$75). “These dishes will make you happy. I want to come back soon”, declares Gil Guimarães.

New Koto
Lovers of Japanese cuisine will also be able to try delicious sushi, sashimi and Temaki in Brasilia. Despite the cold delicacies, Cristiano Komiya’s cuisine stands out for its hot dishes. Guimarães suggests the scallops with mushrooms which arrive “on the table literally on fire”.
