TOOLS

1 non-metallic bowl(s), 1 auxiliary bowl or plate, 1 cutting board(s)

EQUIPMENT

microwave + conventional

METERS

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients CHOCOLATE SALAMI

– 100 g of coarsely chopped cornstarch biscuits

– 1 can(s) of condensed milk

– 1 cup(s) of 50% cocoa powdered chocolate

– 1/2 cup(s) of cocoa powder

– 2 tablespoons unsalted butter (1 tablespoon = 20 g), ointment + a little for greasing

– 100 g unsalted roasted cashews, coarsely chopped – (OPTIONAL) (or unsalted roasted Brazil nuts)

PREPARATION:

  1. Remove the butter from the refrigerator to bring it to a smooth state.
  2. Separate the ingredients and utensils for the recipe.
  3. Place the biscuits in a plastic bag and beat them with your hands to break them into pieces of about 1-1.5 cm.
  4. Coarsely cut the chestnuts (optional) into xerém pieces.

PREPARATION:

Chocolate salami – preparation:

  1. Place the butter in a non-metallic bowl large enough to contain all the ingredients – if it is not already creamy, place it in the microwave for a few seconds, without letting it melt.
  2. Add the condensed milk and mix well until the butter is completely incorporated.
  3. Then add the chocolate powder and cocoa, little at a time, mixing after each addition – mix well until you obtain a smooth and homogeneous mixture.
  4. Add cashews or Pará nuts (optional).
  5. Finally, add the broken biscuits, little by little, distributing them evenly throughout the dough.

Chocolate Salami – Modeling:

  1. Cut out a rectangle of foil or plastic paper, compatible with the quantity of dough you have prepared – in the end you should obtain a cylinder of about 7 cm in diameter – and grease it lightly with a little butter.
  2. Distribute the chocolate and biscuit mixture in the center of the pastry along its entire length as evenly as possible.
  3. Wrap the dough with cling film and close the ends.
  4. On the counter, roll out the dough until it forms a cylindrical shape.
  5. Arrange the salami on a serving plate and place in the refrigerator for at least 3 hours to firm up.

FINALIZATION AND ASSEMBLY:

  1. When serving, remove the chocolate salami from the refrigerator and discard.
  2. Arrange on a serving plate or wooden cutting board and serve cut into slices.
  3. Keep in the fridge.
