Cod is a dish closely linked to religion. Easter, being a Christian celebration, has this meal as one of its traditional culinary symbols. This custom dates back to the Middle Ages, with the tradition of fasting, which allowed the consumption of only cold meats, such as fish, on the days of the celebration of the resurrection of Jesus Christ.

Cod with fried potatoes
ingredients
- 800 g of cod desalted into slices
- 6 potatoes
- 2 cloves of garlic, peeled and chopped
- 3 hard boiled eggs
- Salt, olive oil, thyme, ground black pepper and black olives to taste

Preparation method
In a pan, place the potatoes, cover with water and place over medium heat to cook for 30 minutes after boiling. Turn off the heat, drain the water, wait for it to cool and wrap the potatoes in a cloth. Punch the potatoes lightly to flatten them. Season with salt and set aside.
Place the cod fillets in a baking dish greased with olive oil, distribute the potatoes around them and drizzle with olive oil. Add the thyme, garlic and black pepper. Bake in a preheated oven at medium temperature until golden brown. Then remove from the oven and decorate with black olives and hard-boiled eggs. Serve immediately.

Cod gomes de sá
ingredients
- 600 g of desalted cod flakes
- 500 g of potatoes peeled, cooked and cut into slices
- 1 1/2 cups olive oil
- 1 clove of garlic, peeled and cut into slices
- 2 onions peeled and cut into rings
- 2 hard boiled eggs
- 5 cups of hot milk tea
- Salt, ground black pepper, black olives and chopped parsley to taste

Preparation method
Place the cod chips in a pan, cover with water and cook over medium heat for 5 minutes, without boiling. Then turn off the heat, cover the pan and leave to cook for 20 minutes. Next, drain the water, place the chips in a container, cover with milk and leave to infuse for 1 hour and 30 minutes.
Meanwhile, in a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic and brown them. Then drain the cod from the milk and place it in the pan. Add the potatoes and mix well, but do not cook them. Season with salt and black pepper and transfer the mixture to a baking dish. Place in the preheated oven at medium temperature for 10 minutes. Sprinkle with parsley and decorate with olives and hard-boiled eggs. Serve immediately.

- 2 onions peeled and grated
- 250 g of milk cream
- 2 tablespoons butter
- 1 kg of peeled cassava
- 340 g of tomato sauce
- 1 cup of water
- 2 tomatoes without skin and seeds, chopped
- Salt, pepper sauce, olive oil, pitted black olives, parsley and chopped chives to taste

- Breadcrumbs for flouring
- Grated cheese for sprinkling

Preparation method
Place the cod in a container, cover it with water and leave it to soak overnight. Then drain the water, put it in a pan, cover with water and heat over medium heat until it boils. Turn off the heat, drain the water, wait for it to cool and chop the fish. Reserve. In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add the cod and fry for 8 minutes. Then add the tomato, parsley, tomato sauce, chives, pepper sauce and water and boil. Lastly, add the olives, mix well and set aside.

- 1 cup cream
- 1/2 cup tomato paste
- 400 g of pasta for lasagna pre-cooked
- 350 g of sliced mozzarella
- Salt and olive oil to taste
Preparation method
In a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the cod and brown for 10 minutes. Add the cream and tomato paste and mix until a thick sauce forms. Season with salt and set aside. In a refractory container, make a layer of sauce, place the pasta on top and cover with the mozzarella. Repeat the operation until the entire refractory is filled, ending with the cheese. Place in the preheated oven at medium temperature for 20 minutes. Serve immediately.

Cod stew
ingredients
- 600 g of cod
- 1 onion cut into slices
- 2 cloves garlic, minced
- 2 tomatoes cut into slices
- 1 green pepper cut into strips
- 1 red pepper cut into strips
- 400ml of coconut milk
- 1 lemon juice
- Coriander, olive oil, salt and ground black pepper to taste

Place the cod in a container, cover it with water and leave it to soak overnight. Then drain the water and season the cod with the lemon juice. Reserve. In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until golden brown. Add the tomatoes and sauté until they begin to fall apart. Add the peppers and continue to fry.
Add the cod set aside, mix well and cook for about 5 minutes. Then pour the coconut milk into the pan, stir to incorporate the ingredients and let it boil for about 10 minutes.
